how in the hell do i control the humidity of my fruiting chamber?

yep, so.. i've got a shoe closet setup. it's like a martha stewart closet... but for shoes. anyway.
i just stuck a cool mist inside of it at the bottom. the humidity is already at 100%. i think this is fine for now, as i only just put two test trays in today. it'd be nice for these tests to work out well though, so i'm wondering if 100% RH will be too high for the entire fruiting cycle?
and if yes, how can i control the humidity without creepily sneaking into my basement throughout the entire day to shut the humidifier on and off, on and off...?
please help.

oh yea i forgot to mention that i do have timer... but i don't know if it's the right kind. i've a lamp and appliance timer...by intermatic

for what you're attempting it's fine. For more advanced control of your humidy, cycle-based timers are the best. IGS-011 from intelligent grow systems is the one I like, runs about $85-99 but has cycle durations from 30 seconds up to 30 minutes on intervals anywhere from 1 minute to 8 hours.
The other thing to keep in mind is that while cakes require 95% or higher humidity, casings only require humidity to be in the 80%-85% range. This is because the "casing" over the colonized substrate becomes _part_ of the humidification system. Once you master that sweet spot of "how wet is wet" for your casings, you'll be golden.
