how should i measure my water incubator temp?

i have a 20 gallon rubbermaid with a 50 watt heater on the side with a 10 gallon rubbermaid to hold the jars in while it seats in the 4-4inches of water between them. ANyway how should i take the accurate temp of the water in there? use a water gauge strip like on a fish tank or will my therm/hydrometer sitting in the 10 gallon more accurately gauge my temps?
please any advice is nice........

don't go by the temp of the water.
go by the temp of the air inside the incubator.
use you gauge inside the incubator to tell how warm the air is.

yeah just use a thermomiter or something inside the incubator. The water wont tell you the temp the spores are exposed to. Also, although I keep forgetting this, ive heard that inside the jars gets a couple degrees warmer then the incubator itself.

I like to keep my incubator at 82 degress. I figure that combined with the warmer substrate temperature they'll actually be holding at about 85degress which is very ideal. One time I took a jar straight from the incubator and broke it up...it was suprisingly warm!
