The only thing I would worry about is that if you got a small bit of contamination you would loose everything. If you have several smaller casings and 1 got cotaminated, you could chuck that one and save the others

yes.. it's just not worth the risk of losing the entire thing to contamination. it might look neat, but it doesn't make any sense.

Hey goodiebag...I've done it both ways and honestly if you use the right size trays you end up with the same amount of casing surface and (like the other said) you have the ability to take out any that have a problem. Definitely go with multiple trays. I'll be posting some picks of this very thing at my website this weekend...come check them out...Saturday!!! Good Luck.
