Your mushroom is most likely not Hen of the Woods, but the earlier fruiting lookalike found here: http://www.mushroomexpert.com/meripilus_giganteus.html. Meripilus giganteus is also edible and some people find that it tastes quite good, to me, though the flavor is not bad, it is astringent like over strong tea.

M. giganteus starts fruiting much earlier than Hen of the Woods and can be distinguished by black staining when handled.

I have mistaken this mushroom many times for Hen of the Woods until the black stains appear.

Hmm, I don't see black staining in his photos, but perhaps amatuer noticed the colour change after picking???

The porous side of these specimens are white, however, consistent with M. giganteus.

Good call. Even if it is Hen of the Woods, this is a look-a-like worth noting.
