monotubbing, second attempt

in retrospect, the 2 major reasons for failure were:
(1) trying to induce pinning to early, substrate was not actually fully colonized when pinning was induced.
(2) no casing layer.
many will argue a casing layer is not needed with cubes, however, without one, the conditions must be that much more precise to get the desired results.
this second attempt is basically the same; pf pints spawned to coir/coffee/calcium carbonate/gypsum using this monotub tek. spawn ratio was about 1:5. tin foil with holes poked in it has been placed over the top of the substrate while coir is colonizing. tub is covered to keep light out.
it has been a week since spawn and it is looking very good, mostly white all over, no visible contams. the brown color of the coir/coffee, etc is still visible on the surface of the substrate. all areas are white with mycelia, but some spots are whiter, thicker with mycelia than others. this time, fruting will not be induced until all areas are very white and thick with mycelia. another week should do it.
should the tin foil be left on top of the substrate until substrate is 101% colonized?
casing layer will be MGMC. this will be laid down when substrate is ready for fruiting, as described above. should tin foil be placed over the casing layer for a few days as well?
please comment - monotubs are really the only available option while this project must sit unattended for 4-5 days a week. any ideas for success are appreciated.

considering using a black plastic planting tray that is about 2" deep and cutting that to size to lay over the substrate layer while colonizing. cutting several holes in the tray to allow gas exchange. it also comes with a clear top of identical measurements. could use this to put over the casing layer when applied. make more and more holes in it to allow more air exchange and then take it off once mycelia is poking through the casing layer.

no one has any insight about covering the substrate in the monotub while spawning/colonizing??
any downside to leaving it covered for a few days after its 100% colonized??
