After rinsing and soaking 24 hours, why do you boil for five minutes?

to get the proper moisture content, same as the stirring and evaporation.

It helps Flash dry the grains. You want to pour it into a strainer while STILL BOILING. The steam will help dry the outside of the grain. When using grain like Rye you want all the moisture to be INSIDE the grain. Not outside.
Also I let mine drain after rinsing for about 30 minutes to 2 hours depending on how much time I have. I also use a towel if necessary to help dry the outside of the grains.
Make sure you use gypsum in your soaking water also. Ever since I've tried this method I'm never going back. Helps make those grains nice airy and loose. (1 tbsp per 2 gallons of water)

Well I guess it depends how well you rinsed pre soak. Sometimes If I was lazy on my pre soak I still post rinse. It also helps get rid of the slimy coating that sometimes forms on the grains while soaking.

As do I. Never hurts to do a post rinse though. Especially for those who are new to grains. Just as long as they make sure that the outside of the grain is dry to the touch before loaded into the jars. Thats really whats important here.

you rinse the grain really well first....then add your grain to a pot and fill it with half water/half coffee + gypsum...soak it for 24 hrs...then bring that pot to a boil..
I believe its 10 minutes tho...not 5...someone correct me if i am wrong.
10 worked great for me.
and then strain it really well over a period of 30 minutes to an hour(until all the moisture is gone, etc)

That's the reason for the boil. After a 24 hour soak, the grains are fully hydrated. They don't absorb any more during the boil. I don't rinse after the boil because I don't want to wash the gypsum off the grains. If you rinse really good pre-soak, a rinse after the boil is not necessary.
A fringe benefit to the boil is that it kills the active bacteria that have germinated during the soak, thus giving a pre-sterilization. RR

Nothing if the grain is the right moisture content. Make sure they're fully hydrated, and also fully dry on the surface when you load the jars. Following the tek will get you there, but there's other routes to that end result as well. Not every grower boils. I do. RR
