First time grower, Multiple methods, set up description, planned procedure, questions

Hello all,
I've been reading on these boards for a few months now and recently began my first grow project. I bought 6 1/2 pint pure sterilized BRF jars and inoculated them with a few different strains. Unfortunately I did not label the jars as I inoculated so I am going to keep the jars as individuals. The plan is to spawn one to a small amount of straw, crumble and case two, and fruit 3 as cakes (dunk and roll). So I will have three small casings in one chamber and 3 cakes in another. Right now my cakes are varying between 80-100% colonized with one 100% cake already crumbled and in a zip lock biggie incubating allowing the mycelium to recover before i spawn it to the bulk straw.
I'm currently pasteurizing my straw, pillow case method and its holding as we speak at about 175 degrees. My question concerning the straw tek is about the plastic covering. I have an aluminum baking dish that has a raised plastic top which i have poked holes in and i plan to allow the spawn run to take place. Do i need to cover the straw tightly with a plastic bag as well? or will just the dome like plastic top suffice?
For both the straw and the crumbled cake casings, i plan to use 50/50 verm/peat casing layer, my question is about my Calcium carbonate source; a friend of mine works at a fish store and mentioned that he could snag me a baggie of crushed coral, im not sure what else would be in it but i wouldnt think anything harmful, especially after sterilization.
As far as the cakes, standard dunk and roll after im sure theyre colonized 100% and wait a few more days.
Any comments, questions about the set up, or answers to my questions would be very much appreciated, and thank you all for making this a great community, I learn every time I log on.
Happy shrooming,
Seo
ps. excuse any mispelled terms, this was written rather quickly and spelling is not my strong suit to begin with.

sounds like you are well on your way to lots of fungi
what strains did you have? you'll be able to tell once they're fruiting
what do you plan on using for the fruiting chamber?

just using some clear sterilite tubs, ill fill the cake chamber with a good 4 inches or so of perlite, the caseing chamber maybe 2-3. Fan, mist, all that good stuff, and hopefully produce a few nice pinsets.
The main question i have still remains, and i dont think i stated it too clearly. My straw is now cooling, which ill let sit overnight, tomorrow when i mix up the bulk, should i cover it with a tight plastic bag or will the 2 inch tall plastic cover that "snaps" onto the aluminum baking tray be alright? Also should i set something sterile on the straw or will mashing it down real good after i mix be enough?

what i would do with it is after you mix your spawn in and get it the way you want take plastic wrap with a bunch of little holes in it (i fold it and stab it with a fork or something like that) moosh? it down and stuff the plastic down the sides this helps it colonize.this link should help ya

I got the crushed coral today, the thing is its not quite "crushed." Its more like very small pebbles. Some parts of the bag are crushed more than others but overall i think the size is a bit larger than what should be put in the mix, do you think it would be alright with a little bit larger pieces? I suppose it will still serve the purpose. What do you guys think?
