The yellow is probally from water condensing in the jars, look in the mmgg it says something about that. The bluish grey cast is probally bruisng. Did you touch the cakes when you birthed them? That will cause it to bruise. I don't think you have any contams if the cakes smell fine and are producing mushrooms.

any stress really can cause that blueing graying effect, like it could have dried out at that spot also. and the yellow was probably just a little water damage from condensation on the jar, which really isn't a big deal as long as it is just a small spot or a few

A quick education on different mold types:
Buy a loaf of bread, mistreat it, look at what grows on it. A good indication of how a jar shouldn't look! Blue green molds can start out white but tend to turn green in the center of the colonies. Keep a close eye on things.
