I buy it at the store and drink it. Pretty damn good, makes you feel good, whether that's psychosomatic or not.

I've had a few bottles of the drink, and I very much enjoy it. Any digestive issues I have due to dairy products or whatever else I've ate that wasn't organic fruit and nuts dissolved away. Basically, I had really positive results from the drink, and I looked into growing the cultures.

However, I didn't find a site that I felt trusted to buy a culture from. I am afraid of being scammed, so maybe if you got the cultures offline, you could send me the link?

I think I will PM you this message, too, simply because I'd really love to grow some kombucha.

You really don't need to buy a culture. Very few people know this but, if you make a strong tea using 1 tea bag to one measuring cup of water, add 3 Tablespoons of sugar cover well with a cloth and place in the cupboard for about 3 weeks you'll get a baby started  without using a piece of starter culture. Using a culture is quicker.. but this does work.

Why would people sell it for good money if you could just make it in your cupboard from tea and sugar?

Go here, and you should be able to find a free starter culture near you.  I have never had to pay for one, and I have made gallons upon gallons of the stuff.  The only cost is the tea and sugar.

As far as making your own culture, I definitely wouldnt trust anything that grew without a starter culture.  IMO, that is like putting together a substrate for shrooms without spores, and eating the resulting growth expecting it to be psychedelic.

There are many compounds that create that vinegary smell (mother of vinegar for one) so I wouldnt take that as any indication that you have kombucha.  The exact fungus you want is called Medusomyces Gisevii Lindau fungus.  That is the kombucha strain, anything else is just a random mix of yeast and bacteria, and may do more harm than good.

I used to make kombucha and kefir. I miss the kefir. I'm currently making apple cider vinegar. The smell is similar, but the mother has a similar but different appearance. I used braggs as a starter and 100% no preservative apple juice. Takes awhile though, longer than kombucha.

I miss kefir. I'll have to get some grains. Good stuff. I like live foods, I want to try Kimchi next. Saurkraut is easy enough, Kimchi should be easy.

pz,

G

I've been making my own kefir, water and juice kefir, kombucha, kvass and room temp yogurt strains at home for years . As far as edible probiotics go kefir is king, but it ended up being too much of a pain for my lazy arse to make everyday so I just buy Helios brand now at my local co-op.

Anecdotal and person experience suggests kombucha is great for detox, for the joints , for digestion and many other things and has many beneficial organic acids as well as friendly bacteria. Tea in itself has been known to have health benefits as well. I LOVE the taste of the stuff too and it is so easy to make. What's fun about it is depending on the tea you use the taste is different. Kombucha made with green tea to me tastes more like a zindfandel wine while black tea kombucha to me tastes more like hard cider . Both I love. I use the continuous brew method which provides the largest array of health benefits.

Cultures can be purchased off of ebay for a couple bucks . Kombucha is cheap to make, all you need is tea, sugar and the culture . With proper care the culture never needs to be repurchased. Using darker sugars such as sugar in the raw has always given me quicker culturing times over white sugar , though plain ole white table sugar and cheap ole Lipton tea bags work fine . Much of the sugar (all of it if ya let it go long enough but will taste like vinegar and essentially is if left that long) is used as fuel for the culture so no worries about the high carbs in the starter tea if you care about such a thing.

Edit: Whoever mentioned kimchi , that's fun to make as well and I just love fruit kimchi . I highly recommend the book "Wild Fermentation" for all kinds of fun projects.

have you tried innoculating your new batch with a bottle of kombucha bought from the store? if you do it cleanly, u can filter out the pieces of culture, and use those.
