these are really interesting, I found them all on the same stumps I found bright white oysters the year before. All of these are a red/deep maroon kinda purplish caps. The gills are white. They smell like an oyster, unfortunatly all these were past there prime and all buggy. But they're interesting. The stems were a bright white, like it was candy filled , soon as I cut it I noticed it.

Those *are* interesting. I've noted locally that the cap color of Oyster Mushrooms seems to vary during the season. The central stem on that one specimen is certainly unusual for an Oyster, although the rest of them look normal.

Yeah, I have seen colour variation between fruitings from a log i have outside... The first flush was dark gray, yet the second flush produced white to pale tan caps!

I would be certain to take a spore print and confirm white spores, unless you saw spore deposits on the caps below.
