taking care of mold.

I pulled the jars in question. Dumped them out into the trash. now I have the jars in the dishwasher and I'm cycling them, what other precautions can I take or should I take to make sure the mold that got into these doesn't get into the next batch (from the jars that is).


I realize this could be a non issue but I'm paranoid.

if you use a syringe.. poke two holes in the top of the lid on both sides.... that are slightly larger then the needle....... heat the needle before you put it in the jar...... and make sure it doesnt touch anything...... before and after this...... put tinfoil or tight plastic over the top to seal it

tell me if you dont understand some of this or need more detail

oh, I'm using a glove box next time.

but as long as I have a thread open I have another question ... according to the rye tek he puts a "breather" hole in the top, but then he covers it with Tyvek. Would it be wiser to just do two small holes and then Tyvek to cover?

what I'm getting at is that I don't understand the necessity of the breather hole with a vapor barrier tape.

my next routine, like I said...instead of trying to sterilize a room, I was going to make a simple two hole glove box, spray it down with alcohol (let it dry), move my jars in, spray it down with oust,put my gloves on..wipe them down with alcohol(then remove the aluminum foil from the jars), then flame sterilize and alcohol cool the needle every time between jars.

I'm not even going to take the jar out until I've put a band aid over the hole and the Tyvek tape itself should suffice for moisture trapping.

is this sufficient? and the question about the breather hole stands if you or anyone has an answer?

well the breather hole is to keep it rich with oxygen... and it is then covered so it is protected from all the air born fungus spores and what not... to go threw the hole.....but theres still a small amount of oxygen that goes threw... well thats how it is in theory

think I should just move onto the box to keep things sanitary?

I don't know, a lot of people (RR for one, it seems) will tell you that too much o2 could retard mycelial growth, that a relatively high level of co2 is good for colonization. I think for a half pinter, a barely-loose lid might be better than a tyvek covering.

I agree completely... but in this case I'd be using quart jars of Rye, and the breathing hole is only about 1/2 and inch.
