Just finished PC, are they burnt?!

hard wheat berries

started off with simmer for about 45 min, until kernels started to burst. Then strained and put on sheet to let the steam roll off. them spooned into jars with holes, tyvekd and foiled. PCed for about an hour 15 min until the water ran out. when i pulled them out they are a whole lot darker and since i dont know any better they look burnt to me. I obviously dont want to open it up and touch it but, are they supposed to darken and appear a lot drier than when they went in?

I have no experience with wheat berries, but with rye they are a bit darker and they definitely appear to be dryer. I think that's b/c all the water has been forced inside the grain? But I don't really know.

No. You also are not supposed to boil until kernels burst. If you'll soak overnight first, the kernels will be soft, and will have absorbed most of the water they're capable of, so they won't burst when you boil. You also don't want to let the PC run dry. As soon as pressure is reached, you need to turn down the stove to the very minimum setting that will maintain 15psi. If you leave the stove on high, your PC will run out of water. Your grains are ruined. Start over.
