I agree with curecat on the gyms. Why put yourself through that much torture without any guarantee of a payoff. Also, I was under the impression that gyms in Australia were not active. I'm sure someone will correct me if I'm wrong.

I've heard this as well - as far as I know, no-one has found a bluing gym. Bit of a shame when there's 30kg of them on the ground!

UPDATE - the specimens that were originally thought to be oysters, are in fact Omphalotus nidiformis - Ghost fungus!
I found some more specimens, and after reading about them in another message board I grabbed a couple and had a look last night.
I almost fell over when I saw them glowing as bright as day!
I never thought I'd find something more fascinating than active mushrooms, but bio-luminescent fungi take the cake!!

Its good to know that you have mushrooms that have white spores, look just like oysters (actually they look very much like white jack'o'lanterns), and are poisonous.
There must be an easy way to tell this from a Pleurotus when you look at it up close.
What is the most noticeable difference?

I think one of the bigger signs is the purple colouring that develops in the centre of the cap, but I have no experience with wild Oysters and aren't even sure that they grow in the Wild in Australia, so its hard for me to say Alan.
I am not new to hunting in any way, but I am very new to hunting for 'normal' mushrooms.... 
Are there any species of Pleurotus that have a colouring on the cap?

Our oysters are not purple towards the center like your Omphalotus do. Your mushroom gills also tend to stain brown when bruised.

I do believe that staining you see is in fact insect damage, and the specimens are reasonably old - the gills looked like they had mycelium growing on them, and they were getting rather droopy. Pretty sure the staining is an age thing, but I'll have a closer look.
I have a nice handful of specimens and taking prints now - cant wait for the show to start tonight!!

yes, Pleurotus ostreatus caps can be brown or grey in the wild and there are cultivated pink oysters as well.
