Help with poor man's sterilization

Hey guys, I'm doing my first batch of PF Jars, 6 of them total and so far stuffing them with my substrate and all that has been pretty easy. But unfortunately, I don't have a pressure cooker, nor the means to acquire one, so I'm forced to use the less effective boiling pot method.
I have two big pots, both with lids. One of them has a hole in the lid (on purpose) for the steam to escape. Should I use that one, or the one without the hole? Also, on both of them, when I'm boiling/simmering an inch or so of water, the steam still escapes through the lid, because the connection is not airtight, is that okay? So I boiled my six jars for 20 minutes in the first one, but I got frustrated because the steam was escaping, so I used the other one and the steam still seeps through. Is this going to be a problem?
Help me out please.

Also, real quick: do I need to put a towel on the bottom of the pan, over the water? I'm afraid to do it now because it's really hot, and I don't want to have to start all over again..

put something on the bottom so the jars won't crack and just boil them for 45-60 minutes. in an ordinary pot. water halfway to the jars.

It's best to have the jars totally out of the water when steaming. That prevents water from splashing up and getting under the foil and into your jars. Use the lid without a hole, and when the water boils, turn down the stove to the minimum setting that will keep the water boiling. I recommend 90 minutes when steaming. I bought 1 pint jars on accident but I put their lids to use, along with some aluminum foil I made a great base for this pot, and they all fit! Thanks :smile:

Road Kill and RogerRabbit look like some of the deadhead people my mom new in the 70/80's.. only with no tie dyes on. I can picture these guys playing ultimate or discgolf eating shrooms, and wearing tie dyes listening to mellow stuff and puffing sativa.

lol. Twenty five years ago, I had a ponytail that went down below my waist. However, it was a biker thing, not a hippie thing. I cut it off after I got my engineering degree and wanted to make some bucks in the corporate world. Hopefully, those days are over, but you never know.

A towel under an inch or more of water will never, ever, ever, ever burn. The water itself will take a very long time to boil away so long as the lid is on, and so long as you don't use the lid with a hole (which would be pointless and silly).

Why don't people get this whole "wet things don't burn" notion? I'm no genius, but I swear I've answered that one twenty times. Just keep the top on, and keep it at a very low boil for an hour, you'll be fine.

The biggest problem with towels is they roll around as the water boils under them, and I've seen them tip over jars several times, ruining them. Also, if you put two or three layers of jars above the towel, it may not burn, but it will definitely scorch and stink like hell. That's why I prefer just about anything but a towel. Even the lid to a smaller pot turned upside down makes a nice shelf.

Just so you know, I did the poormans boiling method also on BRF Cakes. I had no problem with contams or anything. I boiled 90 min. All jars are about to go in FC. You'll be fine. Good Luck.

P.S. Dont use colored towels, It will stain your pots and jars. The ol'lady is wondering why her two big pots are stained red on the bottom. LOL

Yeah, a rack probably makes a lot more sense, but I need a bigger pot if I'm going to do it that way--and I'd rather just buy a PC for the money!

Jesus, those things are expensive here. I've been all over craigslist, and some nutjobs have been buying them up as soon as they're posted. I don't think many people make garden preserves in the city... I don't know what they're doing with them, unless it's what I'm doing!
