Wait until the casing layer has some mycelium just evenly poking through the top of the casing layer. If it's not even at first, patch it once. When it's just poking through is when it should be put into the fruiting stage. The casing layer shouldn't be all the way colonized as that would lead to overlay and mushrooms will have a hard time forming.
Also what is being used to case w/? If it's coir or Miracle Grow Moisture Control (which contains some coir) then watch out for overlay.

LOL this is not marijuana..hehehe
Keep it in incubation, at 82-86 degrees, in complete darkness with minimal G/E (not FAE) untill mycelium begins to poke out evenly thoughtout casing layer. than switch to fruiting, which consist of three main factors:
1. Drop of temperare to 72-76
2. Introduce light (12/12 is good)
3. Introduce FAE (Frsh air exchange)
those three tjhings should trigger pinning. Good Luck..
