try soaking it in a bucket of water. i think it will just fall apart after that.

The coco brick is pressed in layers.
Take a good look at it and you will see the direction in which the layers are made.

Now, you can take a flat screwdriver or a similar device, and split the brick in several parts where the layers go.

Anno beat me to it, that's exactly how I like to do it. The layers are pretty obvious when you try carving a slab; I use a butter knife and wedge it between a layer, pry away, and get a nice slice of coco.
I wouldn't recommend hydrating the whole thing unless you're going to use it in a timely manner [though some would disagree]
