Pasteurizing Temps

Okay I have read I think RR say that as long as it is above 140 but under 170 degrees you are okay. Am I correct? I am only getting my substrate to about 145 internal temperatures with my new steamer pasteurizer at the moment. Also it is taking a while to actualy reach this temperature (maybe a good 3 hours, so in total i am leaving them in cooler for about 4 hours). Im hoping with all these acumalated hours im reaching same results as 1 hour at 160. Any thoughts?

Why shouldn't the temp go above 170? We're not worried about leaching tannins are we?

Temperatures over this would destroy beneficial bacteria that the myc can use.

Yeah unfortunately my problem is not going over 170, but rather only getting to 140-145.

I hate those little steamers. You want to get your pasteurization bath to about 170F or so, and then dump the pre-moistened straw into it. The wet straw will bring the temp down to 140F to 150F immediately. It's fast and easy to get it to temperature. Simply fill every kitchen kettle you have full of water and bring it to a boil, and then dump it into your tote along with a cup of lime for each ten to fifteen gallons of hot water. Add as much tap water as necessary to bring the temp down if needed.

While you're heating the water on the stove, you'll have your straw soaking in another tote of hot tap water. I mix dish soap into the soak water as a wetting agent, and shoot for a 2 hour presoak.

You want to pasteurize for an hour to an hour and a half, but not longer than that.

Hey thanks RR, but im not using straw. My current substrate is:

50% Horse Manure
20% Coco Coir
15% Black Kow Cow Manure
5% Vermiculite
5% Spent Coffe Grounds
2.5% Blood Meal
2.5% Canola Oil

Using these bags:

Not using a pot of boiling water cause theirs too many bags. I can fit ten at a time in my tub with steamer. It gets to about 165-170 in there, but the inside of bags are only getting to 145 degrees...

But you sau 140 will work right? Im doing them for 3 hours anyways at 140 just incase..

As a home brewer I know a little bit about keeping grains (for example) in that range (mashing). I suggest using a coleman Xtream cooler and adding your water at 30F above optimum temp. After a good stir the grain/substrate should be around 30F lower (with ~ 10 lbs of material) and will maintain this temp with only a 2-3F drop for over an hour.

Obviously I’ve never done this with substrate but I would think that the methods would transfer with only a small amount of tweaking.

I wouldn't go over 90 minutes once they reach 140F. Next time, add gypsum. You'll be glad you did.

What would be the purpose of gypsum in my substrate? Ive read it is used in grain jars to keep them from sticking, would it serve the same purpose here?

My substrate is plenty fluffy with all the Coco coir and oil already, not to mention the horse manure texture is like hay.

I would assume that it’s to alter the water/substrate chemistry to create an environment that is contusive to mycelium but not contaminates.
