A few questions about PCing and JARS...

(1) How high should the water be in the PC, before you place the jars in it?

(2) Can you use electric tape to cover the holes in the jar lids, or does it have to be something else? What is the best tape to use?

(3) Do you *really* need 4 holes in each jar lid? Can it be 3 or 2?

(4) Do I PC the jars for 20 minutes, which I've heard, or an hour, which I've also heard? I'm using the PF-TEK "maximum fruiting method" (1/2cup verm, 1/4cup BRF, 1/4 cup water) ... Is it 20 minutes, or an hour, or what?

I use 1 inch of water, make sure to turn down the heat when the weight starts to rock or the water will dry up on you. Always pc for 45min to 1 hour at 15 psi.

I don't use lid holes or tape so I can't speculate on those answers.

If you are doing the PF tek, then yes, you need 4 holes.
Not 3, not 5, four.

4 holes isnt important. It is just what the PF tek says. Many people say they follow the PF tek and put 2 holes, it doesn't matter really.

1. Halfway up the bottom layer of jars.

2. Electrical tape works fine.

3. YES. Anything less and your jars will take a long time to colonize.

4. 20 minutes is prolly enough but go for 30-40 just to be sure. I do mine for 45 mins and never contaminate.

If many people only put 2 holes like you say, then many people must like waiting a long time for their jars to colonize.

Why would anyone put only 2 holes. The more holes you have the faster and more complete the jars will colonize.

Plus, PF tek says 4 holes. They INVENTED the tek. You dont think they know what they're doing by now? You don't think they've tested every possible scenario to find what's best?

Go ahead and put 2 holes...whatever.

I have a 6 quart PC and I'm going to sterilize 10 jars. I should be able to cook them for 40 minutes without a problem?
