pasteurization and sterilization

I am pasteurizing a bag of cow manure and vermiculite. A lot of the teks I have read on this have the water being added to the bag of bulk substrate and then pasteurizing. Can I just add the water after, seems more practical? Same thing with the sterilization. I am PCing a bag of 50/50 casing mix, can I add the appropriate water content afterwards? thanks

It's harder to add water under sterile conditions. If you can, go for it, as long as the water is sterile too.
I've done the same thing when dry baking some of my ingredients. It's not as effective as sterilization/pasteurization together, but it's reasonably effective. It's just a little more risk in the mix.

It's better to pasteurize bulk substrates & casing mixes. You want to keep beneficial bacteria alive.
Sterilization is for Liquid Cultures any "sterile" solution.(like the water you want to add) Cakes, Grain jars, sometimes tools & implements.
Adding water after pasteurization could risk contamination unless the water & the manner in which it is added is totally sterile. I think it would be more difficult & not practical, I would rather get my casing & substrate to the correct moisture level at the start.

well, when I add the bulk substrate and the casing layer to my monotub, they are going to be exposed anyway for a short amount of time. I am going to try and be as sterile as possible. It just seems like it will be hard to get the moisture content correct in the bags because of losing some in the pasteurization process. Should I over shoot a little on the water then? I am using the oven tek because I don't have a big enough pot for pasteurization.
As far as the casing layer goes, I only need the moisture content to be correct, not nutritional value. I figured sterilizing it completely would work better. I know people use both ways though.
So do you add water past the saturation point before pasteurization to make up for evaporation?

You need to hydrate the substrate and casing materials prior to pasteurization. You can't do it the other way, it doesn't work. In addition, you shouldn't sterilze either. Sterilized casing and/or substrate makes them much more likely to contaminate. RR

I think most of the formulas you find in teks take evaporation into account. The only time I've had overly dry mix was when I stirred my substrate (PF in this case) while it was still hot. Lots of evaporation, and slightly dry substrate--but still mostly viable. As long as you let it cool before mixing it up, you're not going to have evaporation any worse than everyone else who's used the same formula (e.g. the PF tek 2:1:1 formula).
