Jars won't fully colonize--Help!!

Hey guys--Well, the first time I sterilized some jars, three of them got water inside, and have been fully colonized for a few days EXCEPT the spots in the jars that were waterlogged. I'd say on all three between 10-40% of the visible substrate won't colonize, and I was just wondering what I should do with these, if they're still safe to use for a cake or a casing or what.

your best bet is to very carefully turn these into casings. They're probably pretty suceptible to contams yet, so be careful. If you try to fruit them as cakes you'll most likely lose them.
