brf jars dry out during boiling?

i put two layers of foil over the jars (no lids)and put a plate on the jars so the foil wouldn't let any excess moisture in during boiling. after taking out the jars they look more dry than moist to me. is this because i used no lids? the foil is wrapped tightly over the edges and it didn't lift up during boiling.

My jars show some settling / shrinkage too... do yours? I've been wondering the same thing, I think they settle as they cook??

What you were suppose to do was keep the lids on but loosen the lids so that then can rattle but not fall off (Assuming you drilled the 4 holes in the lid for inoculation and covered them with tape), Then you cover the lid with aluminum foil, that is all. Then when you take it out, Tighten the lid through the tinfoil asap which will seal the jar and keep contams out when you remove the tinfoil. Let it cool with the tinfoil on anyway just in case, I use a glovebox, So i take my jar put it in the glove box with the syringe, Then i take the foil off, peel back one piece of tape at a time and inoculate then fold the tape back over the hole and keep going, Leave the jars till you see a white blotch start then take the tape off.

i used drinking glasses for jars because they were shoulderless.

It's fine. The heat forces the moistue into the verm and flour, making it 'look' dry, but it's impossible for them to lose any moisture when surrounded by steam. The only way they'd dry out is if you removed them from the kettle while still very hot and removed the foil. If you didn't do that, they're fine. They should look dry. Wet jars colonize very slowly and are more prone to contaminants, especially bacteria. Properly prepared jars look dry and colonize very fast.

Thanks RR, that's the answer i was looking for.

i don't plan to remove the foil at all. i'll inocculate through the foil but make a 5mm in diameter hole into it and cover it with a round band aid so it would get some air. or as the foil isn't completely airtight will i even need a breather for those jars?

I've never used foil for a lid, but others report that you get air exchange from around the edges. If you're going to do it that way, I'd skip the rubber band.
