The substrate of the block in the pic is a pasteurized mix of sawdust/straw/bran/CaCO3/Gypsum. Ph is like 6,6-6,8. I added some grinded lavender branches to other blocks to see how it affects flavor but the fruits are still developing. I´m also drying some plant roots from my vegetable garden and will add them in the next run.
I´m gonna add more things to the substrate next time but I´m still thinking about it. Substrate should be more complex IMO because in the wild they grow surrounded by soil and other organic material. Soil is complex and mycellium sure digest and use some nutrients and minerals from the soil it grows in the wild. The grass that grows along with the mushrooms sure contributes in any way too. This affects flavor as well as the water it gets. I mist with tap water and wild fruits get rain, the best water ever.
The fruitbody shape is a matter of fresh air and low CO2 levels.
Temperature is now 1ºC at night and 10ºC during the day. The bins are sitting outside in an open garage (there is a roof and 2 walls but half of one wall is open and there is no door). I´ll post pics.
Humidity is between 60-80% and I mist 2-3 times daily. BE in the first flush is 76%.

How did you calculate BE? 76% on the first flush is pretty good from what Stamets says in GGMM.
And did you calculate the ratio of sawdust/straw/etc?

I talked to a guy once about the white button mushroom.  Jeremy heard this same story.  The white button used to be a genetic abnormality, a mutant.  It was unmarketable and usually thrown out.  The mushroom that was sold was the old brown.  It was brown and flat topped.  One day, one mushroom farmer, realized that his white mutants had a domed cap and thus each mushroom weighed more than the flat topped mushrooms.  He cultivated the white mutant and the production per sqft was equal.  His pickers picked more weight per hour.  This is really important because on most mushroom farms, COGS is 50% labor expense.  Then everyone grew white buttons from this strain.  Next came the portabella.  The portabella was the old brown, until the crimini came onto the market.  Go buy some criminis and notice it has a domed cap.  That's right, they took an old brown and bred it with a domed white mutant.  And that's how 95% of the commercial Agaricus crop is descended off that one mutant strain of white buttons with domed caps. 

Wow, that was long and I bet you think its off topic but i want to look at your pictures.  Look at the picture early in the process, what day was this picture taken? 


If you could get the entire surface of the casing covered with mushrooms like that.  You've got a real winner.  An amazing strain.  It wouldn't even matter if the mushrooms couldn't develop further and aborted two days later, before they extended their edges and sporulated.  The strain could self-terminate before extreme sporulation age, lol.  Non genetic engineered strains that win. 

Man those mushrooms make my mouth water.  Mushrooms like that beat all hands down.  They look like Boletes and at the same time very young chanterelles.  They look like Agaricus.  You can eat the whole thing unlike shiitakes.  And top it all off, they have 7x the shelf life of the common osteatus oyster mushroom.

You just need to know the substrate´s weight to get the BE. Mine is 300 gr. wet weight, 100% BE would be 25% of the substrate´s weight in mushrooms or 75gr fresh mushrooms.
I don´t know exactly the ratio of ingredients in the substrate. I add 10-20% bran and 1-5% gypsum and CaCO3 .The straw is added by sight, I use it to get a less compacted substrate cause chips are not available.

COGS = Cost of goods sold

FTW = F@*k the world

Hydrocodone = pain medicine

Sierra Pale (Ale) = Beer
