Coir Question

Last night I prepared substrate(coir/coffee) for my grow, here are the parameters:
1. Tossed 1 brick of bed-a-beast and a few cups of used chock full o' nuts into a 5-gallon bucket. 2. Heated 1 gallon of water and approximately 1 cup of gypsum to a low/moderate boil. 3. Poured heated water/gypsum solution over brick and into bucket. 4. Covered bucket with aluminum foil and allowed to cool for approximately 4 hours. 5. Removed foil mixed thoroughly with a sterilized spoon and knife. 6. Recovered and allowed to cool overnight.
As of right now, the bucket is still covered and completely cooled. I hoped to finish the entire process last night but after 6 hours of cooling it was still too hot to spawn to. Since I had to open the bucket and mix, I am slightly worried about contams. It was opened in a clean environment but, regardless, it was open air.
Can anyone offer me a suggestion as to where to go next? I think I may need to pasteurize again but I'm not sure. If this is the case, what method should I use?

the next step is to pour spawn into the coir and mix...

Dear David,
I had my first experience with Coir 80% Coffee 20% (little hydrated lime) bulk substrate two weeks ago. Same as you, I hydrated in a 5 gallon bucket with boiling water and covered (pasturizing) .... then adjusted moisture levels up to field capacity with boiled and cooled water.... then put in trays for FC grow and 2 tubs for mono tub grows ..... spawned with WBS and covered ..... but peeked and peeked and peeked .... dang!. Coir / Coffee substrate fully colonized without contamination. Now cased with 50 /50 + and so far, so good! I think you'll have a similar experience. I like Coffee/Coir.

I sort of got a mixed message here... what I'm basically looking for is opinions on whether or not I should pasteurize again.
I agree though; better safe than sorry. If I do go ahead and pasteurize again, what method should I use? I am using glad ovenware so it's possible I could remove from the bucket and reheat in the trays.

This is coir we are talking about rite?, cause some get away without pasteurizing it at all.

Well, my concern comes from the fact that it was moisturized when I opened up the bucket to stir and then allowed to sit over night.
I know coir is virtually free of potential contaminants, but my compost could easily have picked something up from me or the open air after it was expanded and damp... so, that's my reasoning. My original plan was to spawn the same night I mixed.

lockstepgone, I agree and as I have throughout this cycle I will continue to exercise discipline in regards to cleanliness. Could you recommend a method for re-pasteurizing?

Pillow cases are messy and will ruin your water/nutrient levels. Use large plastic oven bags instead. Get your water content right, load up the bags, cook in a pot of water. I've also read of people installing filters and baking the bags.
I probably wouldn't even pasteurize again, though... The mushroom mycelium will still have a hell of a head start on any contaminants.

Thanks for the all the responses so far...
Due to the limited amount of exposure(about 5 minutes clean open air), I feel similar in that most likely it will be okay... however the completely methodical part of me tells me to pasteurize again. My main worry, once again, is that something may have entered the substrate while it was exposed and gained a foothold overnight.
I'm not really sure what I'm going to do yet. The oven bag method sounds like a good idea but it will also set me back by another day.

My two cents...
If the water was boiling...it had reached sterilization temperature.
Whatever part the boiling water touched first probably got sterilized.
Sterilized coir leads to contamination pretty quickly too.
