I'm considering growing them this summer. Here are the differences between Pans and Cubensis than I've noted.

1- Pans do well with thinner substrate. Once source recommended a 3" max depth.

2- Pans prefer manure based substrates, don't fruit well on straight grains or PF cakes.

I usually grow cubes with 3" manure based subs, do I need to change anything at all to grow Pans? I feel like I'm missing something.

Is there anything "harder" about Pans?

they are more sensitive to contams and enjoy higher temps around 90 -95

you can use straw or prefferably c/poo

90 to 95 will fry them and dry out the substrate. They'll fruit just fine at 80F. Treat them like cubes only with a thinner substrate. I go with no more than 1 1/2" thick manure substrate, with 1/4" to 1/3" peat/verm casing layer. They need a tad longer than cubes to pin generally.

Contaminants grow on substrates like any mycelium, and if they get a head start will ruin any grow. Copes are no more susceptible to them than other species.
