Boiling LC's
    #6772110 - 04/10/07 08:09 PM (17 years, 9 months ago)

I boiled a karo LC for 35 min. in my pc without a rack and got slight carmalization, I boiled it with the rack for 40 minutes and was fine.

My questions are this:

what are some signs of carmalization with honey?

does honey contaminate easier than karo?

and how long should I boil my LC?

thanks

I can't help you on this one as I only PC LCs.

However, if I could add, a "bump" isn't supposed to be done until 48 hours has elapsed with no responses.

Just a friendly reminder of forum etiquette.

The word carmelization is the browning of sugar, so figure it out.

Honey does not contaminate easier than any other sugar blend as long as you follow the procedures properly.

Boil? Pfft... PFFFFT, PC is where it's at.

With a PC you cut your LC sterilization time down to 15 minutes.

The shorter time with a higher temperature ensure sterilization without carmelization, in my experiences with honey.

As for myself, I use a weaker LC solution - 3% or less (I found it works better). I also found out that this solution does not caramelize even after 2 hours in the PC. I had quite a few contaminated LC jars and after I discovered this, I started boiling for very long and the problems disappeared. So, if you want it to be foolproof and are prone to experimenting a little, try different LC media and different concentrations and there is a good chance that you may find something which is PC-able for long periods with no problems.
