Small Commercial Oyster Growing Operation - Grown on Straw *Pics* Update: New Grow Room! 01-03-09 2

This is an overview of my small mushroom farm here at my facility in Oregon. We will start off with growing oyster and then once we have the funding, we will then go to shiitake, and other varieties.
Here are some pictures of the Bulk Pasteurization process using a 55 gallon drum:
 Here is the straw inside the barrel inside a wire basket using a brick to weight it down during pasteurization.
 This is a picture of the Propane tank and line going to the burner under the 55 gal tank, and Also the valve I installed on the bottom of the tank to allow it to drain. *important*
 This is the Basket out of the barrel used to hold the straw.
 This is the inside of the Barrel, The shelf used to keep the basket from going to low inside of the drum and touching the bottom.

 Here is the Work bench that the straw is laid on to cool after pasteurization.
 There is a hole on the one end, which is where I attach the poly tubing to *fits very tight*.
 This is when the straw was raised, and is now draining.

Great setup Graham! I love the come-along to pull the straw out, perfect!
How much straw do you fit in your basket? How do you chop it?
Have you ever considered filling the bottom of the barrel w/ a small amount of water and boiling that, to steam the straw? You'd have to separately soak/strain the straw but it may be cheaper in resources in the longer run, heating 5gallons of water as opposed to 40 or 50. Something to try if you have the time/space/spawn.

I fit about 100lbs of straw (wet weight) into the basket.
On a cement pad with couple sheets of plywood against a fence I chop the straw with a troy bilt chipper shredder 6.5HP. It takes some time, but it works.
 Im currently looking for a bale chopper.
I Have steamed products in this drum using the methods you described, however - It actually takes longer for me to get the center of the straw to 160 using that method, so it actually uses more fuel!
I am working on getting a box that I can steam in, by using a boiler to pump the steam into the box, like your bosses farm.
I am currently trying to develop a boiler fueled by wood or oil... We have tons of waste wood around my area. Used Pallets and other waste shipping wood material, and lots of logging.

Here is the next sequense of the growing operation, The fruiting cycle.
The bags were left to colonize the straw for aprox 1 and a half weeks. They were obviously done by 1 week, but time did not permit me to get them into the fruiting room right away. There were some visible amounts of metabolites present.

I like the pics man! I wish I could get mine to be so clear, but I guess when I resize the resolution suffers. Anyway, thanks for all the pics! The bags look ready to go. So fully colonized in one week...what kind of spawn ratio did you use. Or better, how many logs/bags did one of those 20lb spawn bags make you?
I think you're going to have a whole lotta mushrooms soon! make sure you're ready for the spore drop. I remember walking into the fruiting room sometimes, and the spores looked like smoke wafting from the gills into the room. Here's a pic of some spore icicles that grew on some of the caps;

Hopefully you can make out the icicles of spores in the picture, you may have to click on it to make it larger...

Thanks! That's dry weight of straw correct? Figuring 50lb bales, that's like 8 bales. I get about 6 logs per bale, so that'd be 48 logs. Is that close to what you have????

actually it was only 2 100lb bales (200lbs). (3 wire bales) 22 logs weighing from 25-35lbs. 400lbs wet total

You might try some trials where you let them colonize on a shelf in the horizontal configuration, and then hang them at fruiting time to save space. I've found if they colonize vertically, too much of the moisture runs from gravity to the bottom of the log, where it either drips out and is lost, or impairs colonization in that area, but either way, the top of the log dries out.
Also, if you rig something for the bottom of the log to sit on, so that it holds half or more of the weight, it prevents the plastic top of the bag from holding all the weight. What happens is the bag slowly stretches over time, and if all the weight is hanging, it tends to chop the fruits off as they grow through the holes you punched. I learned this the hard way. The vent is a 8 inch inline fan duct on a Tee, that is attached to a filter box, using a 3m furnace filter. No HEPA's were harmed in the making of this grow room. It has a dampner installed on the bottom portion to control the amount of recycled air. There is another vent installed on the other side of the room which is basically a 6 inch drier vent with screen material to keep the flies out.
The fan is on a timer to do run for 30 mins every 2 hours.
Im using a small ultrasonic humidifier at the moment which runs contstant.

Hey cool thread! When we do a bale of straw. We just put the whole thing in without a basket. We keep the bale whole. Then when it's done cooking we attach the come along to the twine and pull it out.
Just a couple steps simplified.
Interesting idea about it stretching RR. Most of the time the only fruits that pop off where growing out of the smaller holes for me. So i try to make the wholes nice X marks.
A good tool for making the holes are a few broad head arrow points. The ones with 4 razor blades. I set them on a 2x4 X X X
I used to use a pitch fork. But thats no good.

I'm planning on building another spawn run/grow room so I can rotate.. I think I'll do that next time.

Non that i have noticed. A longer soaking/pasteurize time. But all n all it equals extra free time for me. Luckily the way we harvest the straw out here they do a good job of breaking it down to manageable lengths. No whole stems, probably around foot long sections.

So you're fruiting them vertical and horizontally? I did that too for a while because that was just how the room was set up. But I just really preferred the mushrooms grown from hanging bags better than those grown from horizontal bags. It seemed like they grew more stems in comparison, so more waste for the end user.
But that's just my experience here. I'm interested to hear your opinion on that in a week or two.:)

The coloration on yours looks more brown than mine, and I think we were using the same strain/isolate...probably temp differences and substrate differences.

Im using 3015 Amycel. They are actually slightly blue/grey in color.
I am not fruiting them horizontally, I just took the pic from the bottom looking up, for a differnt view 
They have grown alot since then, I'll be taking pics today/posting more pics.

At wal mart yesterday I saw a half ounce of dry oster mushrooms. They cost 2.99, that is retarded.
It was only like 5 mushrooms. That made me want to get something going.

No doubt, I understand what you're saying. However you want to focus only on the fresh market when you do get something going. China dumps really cheap dried mushies of every species on the market. Realistically, if you're a good marketer you can bring up the fact that the cheap Chinese mushrooms have been testing positive for heavy metal contamination. There's just so much manufacturing going on there, that the air is polluted, and the mushrooms are just soaking that in. I imagine the pollution is in a lot more than just the air too, could be their water and soils as well...in fact China exports all the mushrooms they can, and then IMPORT non-contaminated mushrooms from less industrialized nations.
So fresh is your market. Also when you consider fresh weight, that half ounce really weighs about a quarter pound or so. The per pound price at the retailer is about $12 fresh or dried. Kinda odd...you'd think fresh was more expensive, since you can just keep dried around forever.
Farmers markets you can sell your dried mushies I bet with the right schpiel. JD

I plan on doing some farmers markets this year... I know I'll get more per pound.
The main focus will be freshness. There is no oyster producer around my area and therefore I can let them know that I have a product that is fresh, picked the day they get their order.
I am still locating restaurants to buy from me, so I can increase my volume.

Wow, that is really, really awesome. I was just wondering about this the other day, and the days since, and it's really been getting my head spinning. Price wise, what to you expect to make on this compared to what you put into it? I'm not trying to sound like a capitalist, but I have a lot of land, and would rather do an interesting job to support myself as opposed to a 9-5 suit and tie deal. How difficult would you say it's been so far? Is there much to do once you've gotten them hung? What kind of buildings do you need? I've seen pics of the P. Cub. growing facilities in Holland and the like, and obviously you couldn't set that up here, but they all seemed to be open air facilities with racks and whatnot. What I was thinking is, I've got all this land, it wouldn't be hard to build cheap pole barns and the like on it, and turn them into mushroom sheds.

You got the Idea.
Thats what my operation is in, in a Pole barn.
I am planning on building another 2 story pole bard, more specifically built for mushrooms, but worst comes, it would be great as a barn.
My honest opinion... Mushroom growing is hard work, costs a lot of money for setup, and equipment. You need hundreds of thousands of $ to millions in equipment to make any type of really good profit.. You should expect that if your going to start this, expect to have some bucks to really get going.
I have quite a bit of money invested in my small operation...
After quite a few grows, I may start turning a profit.
If you have potential customers in your area, or near by, it could be a good venture. I would suggest you look around your area, visit stores, look at the prices around you, look in the phone books and call around, or look for mushroom growers.. talk to them, do some research. Once you have done that, and established that there is a demand for them.. Do a small grow op. Test the market, and see how well they do. If they do good, then I would suggest building more facilities, and going from there.

Thanks a bunch, certainly food for thought. I live near a cluster of food distributors that buy from local farms, so selling my produce in bulk wouldn't be too much of a problem. But now I have a better idea of the setup involved, and what it'll take to make it happen. Again, thanks a bunch.

That's the key. You won't make money on button mushrooms because the big farms already have that market pretty well locked up. They have huge facilities with conveyor belts, forklifts, ramps for 18 wheelers to load, the whole thing. It's hard to compete with that on a working man's budget.
Look in your area and see what they have, and especially what they don't have. In many areas, all they have are chinese imported shiitake, and they're small, shriveled up things that look horrible. Shiitake are becoming better and better known for their anti-cancer and other medical properties, and they command a higher price as well. If you can get a good strain and have a source of hardwood sawdust and chips in your local area, they might just be the key to making some money, but you have to grow a LOT to get anywhere. Check with your state department of agriculture about getting certified organic. That's fairly easy with mushrooms because you can't get more organic than hardwood chips from the forest. RR

The problem with log cultivation outdoors is you get all your shiitake in the spring and fall, when all the other log cultivators are also flooding the market. By building a refrigerated grow area, you can produce them all year, which is best at creating a stable market for yourself. RR

Have you considered getting your USDA "organic" certification like Roger was implying? It's cheap and would be easy to obtain with a setup like yours. Having that certification is an excellent selling point.
I'm curious to see the total crop yield when it's all said and done with these logs. Looks good!

The certification is free, but it only costs road expenses for the agent to get to your cultivation area and assess it. Basically you pay their fuel and food expense, they assess it, certify it organic and there you go. I have an agent 10 minutes from here, so the costs should be next to nothing for me. Here's a list of agents. Give one a call in your state to see the deal if you want. Good luck none the less!

How many bales did it take to produce the 125? Is that working with the second flush? How long from inoculating the logs to fruit?

Basically, drove around to better places, with mushrooms and cards and a brochure I made about my company and oyster mushrooms. They were really impressed with everything. I offered a free sample, and then told them to call if they were interested in placing an order. I called them back too, to follow up. I explained that I had mushrooms growing right now, for a certain client, and that I would grow extra to make sure to meet that demand, and that any extra I could get over to them.
volume varies greatly. 5lbs for some supermarkets (small) and 10-20lbs for restaurants.

Cool! I really appreciate the data points. So did you call the restaurants first to set up appointments, or did you just go in during off hours (2-4PM) and hope for the best?

Just Called up a restaurant that really loves my mushrooms. Just sold them 20lbs. 
Restaurants are best - you can get more per pound from them. Distributors always wanna rip you off.
Heres my take on the mushroom industry:
If you start out, grow 10 pounds, go around to some restaurants and see if they would buy, tell them you are thinking of starting a business growing mushrooms and explain that you are testing the market before you just up and spend 100k on equipment.
Next - contact produce distributors and see if they want them and how much are they interested in paying. Then if you think you can profit, setup shop. and sell to distributors mainly, then slowly start selling directly to restaurants and small health stores. They are the ones you will make most of your money from.
I bought plastic containers that have holes on the sides, they hold about 5 lbs. I sell any amount, just if they buy 5lbs I leave the basket with them and pick it up on re-order. (good reason to call them and ask them if you can get the baskets and if they want to re-order)
I've got two regular friges that can hold 40lbs each. I need to get a walk in fridge, but I dont have the capitol yet.

Based on the amount of mushrooms you have now all you need is a couple chest freezers set on low refrigeration setting, a walk in is a bit costly for you right now.

Gods, I'm so jealous. This thread has been so great, and inspirational!!! Great information on growing, marketing, getting certified organic (which I want to do for my herbs too)
That's what I want to do, have my own little mushroom farm. I've been out of work for 10 months now, unemployment has run out and the idea of going back to work for someone else just turns my stomach.
My little mushies have been selling great at the farmers market, but at this point I'm lucky if I can raise 2.5 lbs a week (working on getting bigger.) Sold out one week before the market even officially opened.
Hubbie is so supportive, he's even been talking about ways to convert the garage into an entire fruiting room. Just yesterday, he added that the office would be make a great spawning area, and suggested a name for the mushroom business.

10 lbs.??? Damn man. That's honestly really good yields. It's been years since I did a count on how much individual bags produced, but I was averaging 5 lbs. of pink oysters per bag at the time, and I thought that was pretty good.
I guess that's the proof on how good commercial cultivars (strains) can actually be. Can someone do the math on the BE for me? I'm not too great at that...
wet weight of mushrooms divided by the dry weight of substrate? 220lbs / 200lbs straw? Is that right? so it would be basically 100% BE?

Went into the local Asian grocery store last night, huge place. They have great produce ( but sell live Turtles, almost had a heart attack when I saw the poor turtles). The mushroom selection was, well, not so good. Their shitake's were dried and puny looking. Their king oysters dried looking, and nothing but freakin' stem, looked like the cap had even been cut off of some of them. Their oysters were slimy and horrific. Heck, I can hold some oysters in the fridge for a week, and have the looking much better than that!!!
The only other market I've seen carry oysters around here, well, they were slimy and disgusting. Would have hesitated to put 'em in my compost pile!!!
With all the restaurants too, there is definately a market around her (hubbie is already in sales so he can help there). I just have to get my growing volume up (and let the blisters on my hand heal from cutting hay up).
Now, see what you've gone and started, gotten us all dreaming about making our fortunes selling fungus.

Hey Mousekabob, I know exactly what you're saying about the quality of locally available mushrooms. Where I live, in Florida, most mushrooms are shipped from PA, over 1400 miles away. Then they move through distribution channels until they end up on the shelf in the grocer...lots of room for improvement.
Also to help get your productivity up, you need some tools. Some can be purchased and some can be innovatively designed. The people here are all about designing equipment to make the process more user-friendly.
To help with your hands - maybe one of these McCullogh chipper/shredders (I think mine was $200 delivered)

Here's a 55 gallon drum modified to be a hot water bath pasteurizer.
 Notice the white hot water heater blankets wrapped around the drum and secured with bungee cords. Also a temperature to monitor the center temperature in real time. There's a tap drain at the Bottom to drain the whole thing when done.

Here's a bag filler that cost all of $15 or so to build



then you hoe for the best...

Also king oysters do tend to have really small caps and large stems. The stems are edible, so that's no big deal. Here's a picture from a farm I visited a few years back.
 They grow 1000lbs a day of king oysters (and a lot more of lots of other species too)

Shoulda explained better. The king oysters were in packages of about three, one would have a cap, one only a partial cap, and another no cap at all. It was just weird.
We picked up hubbies chainsaw from the repair shop, and I was drooling over a chipper/shredder they had. Guy dropped it off and never picked it up. Out of my current budget sadly. Been keeping an eye out on craigslist too, maybe pick up a freebie that needs a few repairs.
Also don't have a set up yet for boiling more than a few bags worth of straw at a time. (been tryin to do two every other day)
First, I have to get the space to hang more and larger bags. This would involve constructing a room inside the garage. Then providing humidity to it (humidifiers) and air exchange (fans) We actually figure we could use plastic lumber to build a frame, and cover it with heavy duty plastic. Or, perhaps purchase a small greenhouse and put that inside the garage. Again, this takes momey (vicious, vicious nasty money)
Right now I just have a very small area. Three shelves pushed together, draped with heavy plastic to make a room, with a humidifier, light and fan inside.
My spawning room is the cupboard over the refigerator (Hey, Harry Potter only got the one under the stairs) and there isn't much room in there for big bags either. Was using a closet in the hall, but found the mushies seemed to like above the fridge better. Guess it's warm and cozie up there.
My pasturazation system now consists of a big granite ware kettle. If we stuff it full of cut up straw, I can fill two of those filter type grow bags. (use a candy thermometer to check tempature) Been trying to do a set every other day, but haven't with this hand. Guess I'm gonna have to sucker the hubbie and kiddies into cutting up the straw for me.
We're working on expanding, but it's going to take time, sigh.

Graham, doing three flushes per bag, do you find insects to be a problem? (fungus gnats). If so, what do you do to keep their populations down. Sorry this might have already been mentioned by you but I always like to hear peoples ideas on that.

i was gonna ask why there's open wood... humidity is gonna eventually really get to all thats exposed...right? get a roll of aluminum w/pvc... they use it to wrap around windows...

The fridge vents heat through the back side, and it rises from there. Way to pay attention to the details! You've used the "incubator" that you've always had, but didn't realize it!
Also, of course things take time! If you have any questions, just let us know, and someone will help. I think the biggest advantages come through reading every dang post on this and the mush cult forums just to see what people are doing and how it's working for them. The using that info to create your own system...you'll figure it all out as to how things will expand from here, I believe in you!

Their rooms were cavernous. It was a stacked system. I think beds were 8 foot by 40 foot, and they stacked 8 high. Each room had about six of these stacks of beds. For starters use (Melaleuca alternifolia) Oil from the leaves of the Australian tea tree to treat the raw wood. Tea tree oil is cheap and safe.
When Buying: Look for pure 100% tea tree oil
Dosage: Use a 10% solution, 1 1/2 tablespoons tea tree oil to 1 cup of water
PS..It is a potent antifungal agent.

Ha, read in a thread on here somewher that STamits has tree frogs in one of his growing rooms. Next day, while watering the garden, a little grey tree frog hopped out from under a plant. Caught it, and put it in my grow room. No idea if it's still there.
I use sticky tapes you can get from the feedstore.

That's great that the restaurant will take that much! So you grew about 220lbs. in a month, can they really handle that much? One restaurant? Well dang, that sounds awesome either way...
So what's up with the 3014? I've never tried that one. Why not too impressed? Is it the colonization times or the fruitbodies that you're not too hip on?

when did you order the 3014? I think you said you are in Indiana, correct? I live in the deep south and had ordered enough spawn to get me through the summer from field and forest and when it got here a lot of it was kinda tanish on the outside. The stuff still works but I have had lots of trouble with it. If I take a bag out of the fridge and leave it at room temp for more than 2 days it will start getting all mushie. Right now Im using about 20 lbs of it a week. My point in all this is, are you ordering spawn even in this hot weather?

I am in Oregon, I just don't like the characteristics of the 3014. I am ordering spawn in warm weather, but it only takes 3 days to get here.
Dry weight of the basket of straw is 40lbs which turns into about 130lbs wet.
I do it every other week. (10 tubes)
I can cook up about 4-6 batches for every 5 gallon propane tank, I have 3 tanks.

You might save a little money if you pre-heat some water in an electric hot water heater during off peak hours. Have it turn off at 7:45 and be ready to start your gas burner right away.
Right now retail prices of propane are 3$ per gallon. The cost per BTU equivalent in electricity is 13 cents per kilowatt/hour. Thats a fairly high price. And if you watch your peak demand, thats a very high price.

...quick idea, Graham...about your exposed wood...: i know we often forget about some products "intended" uses but tacking tyvek to wood protects it from moisture buildup and mold ...that was step 2 of siding a house,  after step 1>ripping all the shit off the house... i put up siding and windows for a brief period...

I figure that makes me about 300 + 3 foot long bags (the substrate fits in the 3 feet. There's about an extra 6-12 inches per bag though where they are tied)

Just had to put in my two cents here. First off f*cking beautiful grows dude!!!! 2nd regarding mold on 2x4's, I have renovated many unfinished damp basements with mold and mildew problems. If the mold has already begun to grow, simply covering it with something will not do in fact it may "help" it grow. The mold itself must be "killed" by using a solution available @ home depot or a real strong bleach/water mixture. After thorough drying paint the 2x4's and walls around them (paint everything if you want!!) with a bathroom thype paint containing an anti-microbial "anti-mold" paint it may be advertised as something like this (zinsser makes on called perma-white). The paint is about $25 a gallon. Like I said this is something I actually know a lot about, if you follow this method I can pretty much guarantee the problem will not return. Your posts have been very inspiring:)

Update! (09-03-08)
Since last year I have been working on the planning, and construction of a new grow room. It is 10' by 20' and constructed from a carport frame set on a concrete pad specifically poured for this new grow room. It will have ventilation, and air filtration and will be humidified by a Aquafog® Hydro SS 700™ set on a humistat.
The concrete floor will have a drain so that when the grow room is cleaned out weekly it had a place to drain the water.
I have the concrete forms set and the sub grade will be added and compacted this week and concrete will probably be poured next week.
I have yet to design the racking system used for hanging 20lb bags, but I will be thinking about it in the next few weeks.
The carport frame will be overlaid with 1 layer of 4 year white greenhouse film, and then a layer or two of R-13 wall insulation and then another layer of white greenhouse film. This will insulate the grow room while climate is being controlled.
Climate control will be controlled by ventilation cycles. (summer months)During the night when temperatures are low, ventilation will be adjusted to turn on till the inside temperature reaches the temperature outside. During the day very few air exchanges will occur in order to retain the cooler temperature obtained during the night.
(winter months) Heating will be obtained in the opposite fashion of the summer months. More air exchanges will be run during the day, at the hottest time of the day to obtain heat during the day, and at night, minimal air exchanges will be used to retain that warm air.
When more funding is obtained, a heat pump with an over-sized evaporator will be used to heat and cool the structure when means of ventilation are not adequate.
Lighting will consist of several waterproof HO Fluorescent light fixtures set on a timer.
There will also be some changes in the way I process straw, but very similar to how I do it now.
I will be adding pictures when I get them of steps on how I will construct the grow room.

Site prep has been done, graded, forms set, 3/4-0 rock laid and compacted with plate compacter.
So far costs:
Wood forms: had in stock no additional cost stakes/nails $20.46 3/4-0 rock: $50
I will be installing a drain into this so when that is complete I will update photos.

First, thanks for this great thread, Ive read it through and through a few times now.
I have got a few questions. Even though Ive read through the thread a few times the size of your fruiting room has managed to slip my sight. I'm also interested in your incubation room and environment. Do you colonize your logs horizontal? How much incubation space does it take for your biweekly run?
How many logs will you be able to fit roughly in your new 10 x 20 ?
What humistat will you be using?
Do you think its possible to increase your yields with higher spawn rates? Or with using supplements or additional substrate ingredients?

Thanks! I have worked really hard to get at this point and I appreciate the compliment!
Grow room size is 7ft high, 7ft wide, 11ft long. This grow room is now closed and oyster mushroom production has halted till the new grow room is up.
Spawn run room was just a spare closet in my house. They sat upright during the spawn run. I will convert my current grow room that you see pictured into my spawn run room. You really only need double the space that you will need for your weekly production. For instance, if you want to make 5 - 20lb bags every week, then you need space enough for 10 - 20lb bags. The reason is because your spawn run may run for 1-2 weeks.
I was hoping for about 90 20lb logs 3 rows of 30 bags per row and a production of 15 bags a week, which should produce about 75-100lbs a week.
I have looked at documents that state that up to a certain percentage it is not beneficial to add more spawn. I intend on testing some supplements though.

Concrete has been poured. Started the pour at 10am, and didn't finish until 3:30pm. I was pretty tired afterwords as I always am when I pour concrete. A small mistake was made when pouring the concrete, I forgot about the drain and to rod a small slope to the drain, so it was encrusted in about 1/2 inch of concrete. I have since broken a hole where the drain is and in a week when the concrete is a lot harder I will grind it smooth and bevel around the drain.

Is the county making you treat the drain as gray water, or can you just dump it into your flower beds outside untreated? The reason I ask is I'll be burying a shipping container into the side of my mountain this winter or next spring, and I'd like to just set it where the opening is 6" or so lower so water will drain out to the lawn.

The county says I can drain it on my property anywhere I want, as long as it is not draining into any lakes rivers or streams. Since the drain will only drain water from the growroom, which at most will be a biodegradable cleaning solution, it will be perfectly acceptable to drain it.
My drain leads into a drain system already in place that drains to the side of my property where rain water is also diverted.
If you look closely on the second picture, you will see the pipe coming out of the slab on the right side going towards the white building. Its very difficult to see, I'll have to take more pictures of it for all to see.

I forgot to mention details about the slab.
It is 11'6" by 25'6" the growroom will be 11' by 20'. The extra 5ft of concrete is in the front of the growroom entry and is sloped to aid water drainage, and it was also broomed so it would not be slick. The rest of the slab is smooth, but I did this so that it would be easier to clean and keep hygienic. The drain is a 2 inch drain pipe, with a stainless steel grate and a p trap installed to prevent flies from entering. A small amount of bleach will be added after it is washed down to prevent anything from growing inside the p trap and keep the drain clean.
Next step is to install the sill plates.

So.... Change of plan.
The carport frame that I purchased collapsed during a snow storm... Which is fine I guess. because I wonder if it would of held up had I installed it and everything.
So I ordered a greenhouse frame bender which will be used to bend tube steel for the new steel structure. I purchased it from http://www.hoopbenders.net/home.html
Once I get it, i'll bend the new supports and continue construction.

Update.
I made the brackets and construction has started up again.
Pics!
So I bent all of my hoops, and put one up on a test board to see how it worked out. then I decided to raise it all up to 10ft using extenders on the sides. It really worked out well.

Ohh... and I forgot to mention.
I am a pretty big guy 250lbs+ and I was able to hang from one of the top hoops for a few min's without any problem.
Its pretty damn strong.

So far everything has been made using materials supplied by Lowes, except for the brackets that mount the hoops to the sill plate/concrete.
This will change however because you cannot get the correct plastic from Lowes to cover the structure. I will be getting the insulation soon and beginning the task of covering the structure, and insulating it.

A common way to insulate greenhouse type structures is to have a double poly layer which is kept inflated using a blower. They shoot for a gap of about 4" between the layers. Instead of putting insulation between the layers, you will save money on climate control by inflating it with a small blower and creating a dead air space. Another thing to consider-in winter you would need very little heating if the double poly layer were clear instead of white. In kansas we are able to grow certain crops 12 months out of the year in 'high tunnels' with no supplemental heating. In fact, it is often necessary to cool the high tunnels by opening them up during the day in the dead of winter.
So if you have a clear double poly setup, it will require very little heat in the winter, and in the summer you could put some shade cloth over it to reduce cooling costs.

edit: also, in oregon, snow is a major thing to consider. With a double poly setup, you simply turn off the blower to deflate the 2 layers, and the heat from inside the structure will melt the snow as soon as it makes contact. This would save you the headache of manually removing snow to prevent the collapse of the structure.

Incorrect, you do NOT use these methods outlined for plant cultivation for mushroom cultivation. Air inflated insulation types are NOT for Mushroom cultivation.
I will be using 1 layer of plastic a layer of 6 inch insulation R30-R32 and then another layer of plastic just how the professional mushroom tunnels are built.

Well can you tell me the reasoning behind this type of design? Does it have to do with cleaning/maintenance and pests etc? I am wondering how the benefits of this design, using 100% artificial heating in the winter, would outweigh the benefits of using the sun to heat it. Is taking advantage of solar heating totally out of the question? (not debating here, i just want a better understanding)

First thing, light control, I will not be only cultivating Oyster mushrooms, and I want to be able to control how much light my mushrooms get.
Second thing is the air insulation method used for plants is far less efficient than R30 insulation.
Again, the method you have described is used for Growing plants, not mushrooms.
I have been doing research on mushroom tunnels for years, dual layer plastic and using insulation is how its done.

I see the difference in fixed R value, plus I can see the ease in maintenance in a fixed double wall set up with insulation.
Light control could be adjusted by material type/opaqueness in either case.
Having lived in Fairbanks Alaska for 9 years, I have also seen the benefits of double walled plastic with an air pocket. Nobody has a cabin that is finished there (lol), but they live in them anyways, usually missing the expensive things.. like windows.. they staple gun up a piece of plastic on the inside of the frame and the outside, tyvek tape the edges. At 40 below the inside piece is warm to the touch (with a heater inside, no sun in the winter there). So, I do understand his idea does have benefits and insulates well.
But given the choice, I vote standard insulation as well.

The main problem with that type of setup that I see, is too much heat, and a shade cloth wouldn't cut it. I need temperatures of no more than 70F in my grow room but they can be as low as 50F. Too much light would inhibit mushroom growth as well.
Now if I opened up the grow room during the summer, and added a shade cloth, then the temperatures would still be to high, and I would have pest problems without screens (added cost). Also humidity would be greatly reduced.
My setup will utilize a hydronic heating system with a heat exchanger and an instant water heater, or regular water heater which is very efficient. I will also use a water chiller or a small air conditioner for cooling, and nightly air exchange for cooling(free).
If I used clear plastic and no insulation I could not use nightly air exchanges to bring night cool air and keep the the room cool for any amount of time.
You need to realize that mushrooms are grown differently than plants.
Plants require full sun and more heat and less humidity than that of mushrooms.

Now that I see the terrain outside, I see why you didn't go with underground. Are you going to leave the concrete exposed or lay gravel over it? On mine, I poured a 5 1/2" curb around the edges, which will allow the grow room floor to hold that much gravel. By spraying with a hose, it should maintain humidity pretty well, or at least that's the plan. Keep the pics coming.

What about using a metal roof and spraying foam insulation on? Or maybe Reflectix. The plastic will be cheaper but how long before you have to replace it? These are questions I am asking myself right now even as today we are laying the forms for a 12/50 ft. tunnel with six foot side walls. spray foam is great stuff.. does not breathe at all. You might end up with an exhaust fan to control humidity. I lived in a spray foamed dome house and a dehumidifer running 24/7 left us with enough water to do all the dishes, do personal hygene, water the houseplants, and still get dumped constantly every 24 hrs. However, its very long lasting and again, a great insulator. Just have to plan for the massive condensation.

Would you have to put some bleach or peroxide in the rock water to prevent mold? I would suggest using lava rocks. I used them in my PMP and they worked real well.

Lava rocks came to my mind as well. I am going to start off with two 4 teir greenhouses, with a drip pan. I wanted to avoid the perlite mess in the pans, but wanted something there to hold the moisture so it gets wicked back up. Lava rocks was on the list, good to hear they worked for you.
I would assume some regular interval cleaning would be neccessary in both small and large greenhouses though. At least in my set up there will be a simple drain plug. I think RR will have natural drainage due to the slope of the "cave" (conex).. please correct me. I also beleive I saw this slap had drainage in this set up, again correct me if I'm wrong. But in either case it should reduce risks to be able to drain out pools. Some bleaching on a schedule should be on the to do list, I imagine.

How much do your poles end up costing for a setup like this and what do you think of the hoop bender? Are you using one of their guides/plans for setup?
I was thinking the double poly air insulation was a good idea as well. This was the first time I'd heard it would have major downsides, but it makes sense.

the pipe cost was $10 a pole, so it cost me around $250.00 for pipe, I just bent the pipes as instructed and built the building to my own plans.
Double poly air insulation is wrong. Use R30 unfaced fiberglass insulation.
To hot and too much light is the major problems.
It is good for cold climates, but poor for moderate to warm climates.

I recently obtained a ribbon mixer. It holds around 40 cubic feet of material, so I will use that to mix up my straw and various other things for my business. I need to take pictures of it and post them. I pressure washed it and I will wire brush it within the next week and get a fresh coat of paint on it before I snap some pics.
It has a 3hp 3phase motor so I had to also buy a 7.5 hp 3phase rotary converter. It should be here on Friday.. whoohooo!

Great thread - my personal favorite. Just wanted to extend on offer to ya - I am an architect and my business partner is a structural engineer. I am not licensed in your state but he is. Anyhow, I would advise you or anyone building something like this to get some calcs done on the support system - just because your a big guy and it can hold you now doesn't mean it will for long. i assume your doing hanging logs like you have been doing? id need to know, in addition to exact dimensions of structure: 1) was the concrete reinforced in any way? IE, fiber-mesh or rebar? 2) concrete footing type and depth 3) weight of each log 4) how you plan of securing the logs to the support and whether or not the logs will be entirely top-supported or top and bottom supported (recommended). 5) number of logs per support 6) your geographical location to figure out wind, snow and seismic loading criteria.
then i would give ya 1)beam type and size 2)post and beam fastening requirements 3)lateral bracing requirements. although, i would bet dollars-to-primordia that if you bottom support your logs they will actually act as cross-bracing. bottom supports will reduce loading on main beam as well which will reduce beam size, which will drive down price.
this may all seem like overkill but its not. your dealing with a ton of weight.
i would do this for free to help a fungal brotha out -as long as my name and more importantly my architectural license is kept off it - which it sounds like wouldn't be a problem as I assume you already have a building permit for this? if you want to keep this completely above aboard - highly recommended for company insurance issues down the road - then I would put a structural engineers seal on the drawings for around $400.00. The seal takes all liability of you so if you can afford it go for it - if not just knowing the thing is done right and for free should suffice!
also - whatever you do use PRESSURE treated lumber for ALL supports!!!!

Regarding the 40 cubic foot ribbon mixer..
I got the 3 phase rotary converter, I installed it, wired everything up, got a 100' extension cord, wired that all up. Plugged it in, and bam... nothing but a buzzing sound.
My heart sank to the floor.
My first thought was... maybe I wired it wrong. I checked everything and it was all perfect. So I started at square one... I looked at the name plate and noticed that I had read the power requirements wrong, the motor was capable of running at 220, but it was statically wired to run at 440, which is why I heard the buzzing noise and nothing else.. not enough power for the way it was wired... Here's where it gets hairy.
Normally 3 phase motors have 9 wires coming out of them, and there is a specific way you wire it so it will work for 220, or 440, Mine only had 3 wires... My stomach turned more than it already was.
So, I noticed that there was a sticker on the motor with a phone number to a company up in Vancouver Washington. I called them and they said.. No problem we can rewire it, I said... uh, but, there are only 3 wires that come out of the coil of wire coming out of the motor. He said... YES, that's why you bring it to me, and I'll take that varnish off, pull off the leads and rewire it, clean it, re-varnish it and bake it and you should be all set.
We wont go into the details of how much it cost and how much the motor is worth... blah blah.
I took it down there and we put it on a bench (with a winch, it weights about 150lbs) and he hooked up these huge alligator clips up to it to test it. It turned about 1/4 inch and no more, and then I heard the sound of the shop owner, groaning... going "Ohhh boy, something is wrong"
I leave it with him, and he tells me the worst case scenario, which nearly makes me pee my pants, and I head back home wondering how much this is going to cost me.
Anyways... to shorted this story, after some calls back and forth, he calls me a week later and says its done, so I pick it up. and it looks really nice and new, and better than that, it works. So back on to the ribbon blender to get some stuff mixing.
I have yet to paint the mixer, but that will come with time.

You're not planning to run that motor on a 100' extension cord I hope. You might want to look at nameplate amps on the motor and the efficiency rating on the phase converter. With that, I can tell you what size cord you'll need to feed it with. RR

extension cords are not rated for continuous use. your wires would at least need to be 6g for the amperage drop.

That's not correct. If the extension cord is sized properly, it will carry the load 24/7. There's also no amperage drop. Amps are the same throughout any series circuit. We size long cables larger to prevent voltage drop.
However, running a three phase motor on single phase power uses more than nameplate amps on the single phase line. The phase converter is using capacitors to 'create' a third phase. Power draw(on the single phase line) is +/- 150% of the motor nameplate rating. If for example, the motor nameplate rating says the motor will draw ten amps, count on drawing at least 15 amps from the single phase extension cord. RR

thats prob one thick extension cord to prevent amp drop. Im use to having to add power whips where people ran standard 14g extension cords as a constant power source. And then they would even run them in and thru the walls to power up their entertainment equipment.

Ok Guys! I did the math on all of this 
The motor is a 3 hp 3 phase 220, 10amp electric motor.
The Rotary 3 Phase converter I bought is a 7.5 hp rotary converter, it uses a 7.5 electric motor to create the third leg.
I sized all of the wires according to the directions that came with the phase converter. It is on a 50amp circuit, 6awg from the breaker to a junction box which then tees to a 10 awg which is only 3 feet to the rotary phase converter. It then goes to a plug, the 100ft extension cord is 10/4, and is good for up to 250V and up to 30 amps, which is triple of what it needs to be.

This is the cord I bought.
I put it together just fine..
The motor is rewired and now I'm going to clean the gear box and reattach it. I'll get pictures and possibly a video clip of it running when I'm done.

BUT, The mixer works PERFECTLY!
I mixed up an entire Toyota pickup truck load of horse manure today.
The motor ran so smooth and didn't EVEN bog down, like it was empty.
This thing is going to help me out tremendously. I'm so giddy with excitement.

edit: also, in oregon, snow is a major thing to consider. With a double poly setup, you simply turn off the blower to deflate the 2 layers, and the heat from inside the structure will melt the snow as soon as it makes contact. This would save you the headache of manually removing snow to prevent the collapse of the structure.

I have never seen a 20lb bag of spawn so i'm quite curious how you make the bags!
