Small Commercial Oyster Growing Operation - Grown on Straw *Pics* Update: New Grow Room! 01-03-09 2

This is an overview of my small mushroom farm here at my facility in Oregon. We will start off with growing oyster and then once we have the funding, we will then go to shiitake, and other varieties.
Here are some pictures of the Bulk Pasteurization process using a 55 gallon drum:
 Here is the straw inside the barrel inside a wire basket using a brick to weight it down during pasteurization.
 This is a picture of the Propane tank and line going to the burner under the 55 gal tank, and Also the valve I installed on the bottom of the tank to allow it to drain. *important*
 This is the Basket out of the barrel used to hold the straw.
 This is the inside of the Barrel, The shelf used to keep the basket from going to low inside of the drum and touching the bottom.
 Another picture of the Barrel and Straw basket. Ready to go!
 Here is the Work bench that the straw is laid on to cool after pasteurization.
 There is a hole on the one end, which is where I attach the poly tubing to *fits very tight*.
 This is when the straw was raised, and is now draining.

Great setup Graham! I love the come-along to pull the straw out, perfect!
How much straw do you fit in your basket? How do you chop it?
Have you ever considered filling the bottom of the barrel w/ a small amount of water and boiling that, to steam the straw? You'd have to separately soak/strain the straw but it may be cheaper in resources in the longer run, heating 5gallons of water as opposed to 40 or 50. Something to try if you have the time/space/spawn.

I fit about 100lbs of straw (wet weight) into the basket.
On a cement pad with couple sheets of plywood against a fence I chop the straw with a troy bilt chipper shredder 6.5HP. It takes some time, but it works.
 Im currently looking for a bale chopper.
I Have steamed products in this drum using the methods you described, however - It actually takes longer for me to get the center of the straw to 160 using that method, so it actually uses more fuel!
I am working on getting a box that I can steam in, by using a boiler to pump the steam into the box, like your bosses farm.
I am currently trying to develop a boiler fueled by wood or oil... We have tons of waste wood around my area. Used Pallets and other waste shipping wood material, and lots of logging.

Here is the next sequense of the growing operation, The fruiting cycle.
The bags were left to colonize the straw for aprox 1 and a half weeks. They were obviously done by 1 week, but time did not permit me to get them into the fruiting room right away. There were some visible amounts of metabolites present.
Here we go, Enjoy!

I like the pics man! I wish I could get mine to be so clear, but I guess when I resize the resolution suffers. Anyway, thanks for all the pics! The bags look ready to go. So fully colonized in one week...what kind of spawn ratio did you use. Or better, how many logs/bags did one of those 20lb spawn bags make you?
I think you're going to have a whole lotta mushrooms soon! make sure you're ready for the spore drop. I remember walking into the fruiting room sometimes, and the spores looked like smoke wafting from the gills into the room. Here's a pic of some spore icicles that grew on some of the caps;

Hopefully you can make out the icicles of spores in the picture, you may have to click on it to make it larger...

Thanks! That's dry weight of straw correct? Figuring 50lb bales, that's like 8 bales. I get about 6 logs per bale, so that'd be 48 logs. Is that close to what you have????
