I have 3 inoculated jars that were in my attic for about 3 days. I thought they would stay at around the temp i needed, but i was wrong. So after the temp changed a lot i brought the jars into my room. The jars now look kinda dry but I'm seeing the begging of mycelium growth. Do you think i could save the jars or should i just start over?
Thx in advance if you happen to reply.
P.S. When incubating jars should you allow them to have air exchange? Or do you close the jars completely?
Thx again

You should keep them closed up. Opening them to get fresh air in there risks letting contaminants in too, so I wouldn't chance it unless mycelium growth stalled to a complete halt.
If you see something happening and you're sure it's mycelium and not cotton wool mould, and you don't see any other evil in there, let them do their thing. Otherwise, chuck them and start over. Any complicated cake surgery is going to be a waste of time (trust me here ).

If you made the jars yourself you should have four holes that allow for GAS exchange. Moisture should not be visible in a cake unless it is too wet.
The only time you open a jar is to birth it and you should conceder throwing a jar away if you can see a contamination.
As of now you seem like your doing fine, just follow the teks and you should be fine
