Birthing whole grain as cakes instead of casings - pros and cons?

I searched but found very little quality information on this. Why wouldn't one birth rye/wheat as cakes instead of cased trays? They can be rolled. They will provide much more surface area for fruiting... and if the surrounding RH is high I can't figure out why not.
However I realize that there should be a reason for not doing it.
So, what are the real disadvantages in this and who has tried it?

Once out of the jar, wbs/grain doesn't hold or hydrate moisture well.
That's why there is a LOT of Verm, in PF cakes.
So, it can suck up, retain & release moisture to myc/shrooms.
Plus, exposed wbs/grain tends to contaminate, rather quickly.

If you want to beef up PF style cake mixes.
Add a little bit of aged shredded h/poo to a PF recipe.

Thanks! I'll stick to trays then :smile: The bigger area for fruiting was tempting, but nothing is perfect i guess. :undecided:
