I read a post from an experienced grower (in a spanish forum)who claims that the best way of dunking is mixing tap water with calcium carbonate (3 grams per liter)as it is done in shitake growing... anybody knows something about this?

What would be the purpose? Shiitake prefers a slightly acidic substrate. Normally, we add gypsum to our substrates to provide calcium, but gypsum doesn't swing the pH the way calcium carbonate does. RR

The discussion was about adding h2o2 to the water to prevent contamination through out the dunking process; and he says everybody to forget about h2o2 and just adding the C.C.. so I think maybe to rise the water pH would protect the casing/cake from contamination...

Perhaps, but could also hinder the next flush, due to the high pH. The best way to prevent trichoderma on shiitake blocks is to take them out of the fruiting environment and wash with water every two days or so. This removes the trich spores before they have a chance to germinate. During the spring and summer in my area, I do this every day. I take them to the faucet and wash with a forceful stream of water, then return to the mini-greenhouse. When I put them in the greenhouse, I leave the door open and the humidifiers off for several hours to allow the blocks to dry out on the surface, then close it all up and re-humidify. This seems to completely prevent trich.
In addition, trich in sawdust/woodchip substrates is usually just on the surface anyway, so you can just cover the area with a salt paste to kill the spores and trich mycelium in that exact area. The salt paste will wash off the next time you hose them down, but the trich will be dead since it was only on the surface. (Note to cube growers: This does not work with cased manure) RR

but do you think would be a good idea to dunk manure casings in the water c.carbonate dilution betwen flushes? wouldnt it helps to keep the casing and substrate pH in a good level? or just 3g per liter could affect it in a bad way?

It should be fine with cased manure. I'd avoid it with shiitake though. RR
