Yet Another Question about Temperature

Hi all - This is my first post and I am a complete amateur at this mushroom stuff!  My question is about temperature.  I've researched this subject and see that the recommended temperature to keep the soil at when it's fruiting time is between 70 - 80 degrees.  This is a problem for me at this time of year.  The room I got the setup in goes down to about 61 degrees at night and seldom ever goes above 77 degrees during the day.  The norm is between 67 - 73 degrees.  What does this mean?  I'm getting fruit (just started 3 days ago) and all looks well after moving to soil 2 weeks ago.  Will the mushrooms be less potent because of the temp?  I hope this wasn't a waste.  I'm stressing out a little because I sunk alot of time/research/money into this little project.  I can't move them anywhere else but possible can get a little space heater to warm it up.  How does temp affect the fruiting and final product at this stage?

Also, I've been wondering why things have to be so darn sterile.  It surely isn't this sterile in the wild.  There are mushroom farms around me that you can smell miles away and look the farthest thing from sterile.  How do mushroom farms get away with the sterility problems that homegrowers need to put up with?

Please add an input you might have as you guys are the smartest when it comes to this stuff!  I've spent countless hours browsing these forums and have learned alot.  Although I've found bits and pieces to my questions - nothing as specific though.

Your temperatures are perfect for fruiting. Nothing in mycology needs to be sterile except for grain spawn.

We can't duplicate nature indoors, so we use sterile culture to generate our spawn. After that, just being clean is plenty good enough. Those who stress out over having a sterile fruiting chamber are wasting their time.

I'm just stressing a little because it seems like they are growing very slow. It seems they are growing alot slower than the last time I tried this with great success. The difference being it was last May and much warmer.

If I am not mistaken I think I remember reading that fruits produced at lower temps may actually have a better potency,either way you are fine,cold just slows things down a bit so be patient but aside from contamination getting a foot hole before your colonized you should be fine,most contaminations seem to bloom out of control from heat not cold
