40% milk chocolate custard set inside vessel, topped with caramelized banana gel, chocolate genoise, almond tuile, white chocolate gelato, consomme poured at table

it's just basic bananas foster (brown sugar, vanilla bean, rum) cooked down until the bananas go liquid, then blend it with agar, cook it to 85C then cool it down. Agar-agar is a gelling agent derived from seaweed, it's vegan friendly and can withstand hot temperatures once set (up to 126F) hence my choice to use it as a base for the ice cream to set on, plus milk chocolate and banana go so well, I didnt want a fruit component that was too acidic, since it diminishes the gelling power of the agar. and I didn't want to kill the flavor of the custard.

The plated desserts as a whole (and in concept) are my original creations. Some of the components used are not of my recipes. Remember that pastry/baking IS more of a science than anything else, so I save time (which I don't have a lot of in a restaurant) by using high quality proven formulas/recipes by respected professionals at the top of their game. That is not to say I don't experiment (I do, very much, even at home.) to try and find new things or techniqus. As a chef you are constantly learing; and will be until you die.
