PCing question

Hello. I have a Mirro 8qt pc, but it doesn't come with a little rack thing that keeps the jars from touching the bottom of the pot. Is this going to burn/crack my jars? What can I do to avoid a broken jar? Thanks for any info.

The jars are sitting here waiting to be PCed. I just got this PC and didn't know that it didn't come with a rack. I wouldn't have bought it had I known.

That rack is a good thing, and will help dissipate the heat within the PC so that you don't end up scorching the substrate in the bottom of the jars (especially important with PF cakes).
Believe me; the 1st two sets of jars I ever did I scorched the bottoms of (which is noticable by smell, but not to the untrained nose), and I couldn't figure out why they would not colonize on the bottoms.
Bottom insert in the PC: 
It's actually pretty difficult to break a jar unless you put it into the PC with no hole in the lid or you run it under cold water when it is hot (in which case the entire bottom will usually crack and fall out)

I have used a lid off of a cookie tin. My 1st time pc-ing I used a rag and ended up scorching it. But I did probably have the heat up too high. Just make sure you turn down the heat to maybe halfway or lower after you get to the desired pressure.

If you DO use a cloth just make sure the towel or washcloth is cotton. Someone on here just had a nasty incident with a synthetic in the bottom.
The only way I would only use anything else other than the insert would be if whatever I was trying to PC would not fit with the insert in.

Thanks guys. I'm not sure what I'm going to do. I'm going to look around for something to put in the bottom of the pc. I'll try the towel if there's nothing else.

In your experience, how long is the optimal time for pcing? I have 8 1/2 pint jars in the pc and it's about to build steam.

Be creative,use a plate or something,keep them off the bottom,I cant tell you how long to PC cakes.I PC rye at 15 psi for 80-90 min but I'm sure an hr would be fine for cakes,look around the answer should be really easy to find

Cool. I think I used to pc them for an hour approx. I am an old time grower, but I haven't done it in about 2 years.

at 15 psi...one hour
If ANY substrate in a jar bigger than a pint: 90 minutes
(Yeah, I came back [34 minutes later]...I already got flamed in OTD.)
