I see alot of posts about the direction of the cake. I'm not a cake grower myself, anymore atleast. I've moved on to casings. However, my experience with cakes demonstrated that there is now correct direction/orientation to place your cakes. Cubies grow off the substrate in any direction depending on conditions, moisture, light ect. I would merely birth my cake and the side which was facing down, or the bottom of the jar was my first to fruit. I would put the cake jar botom side up and case it with damp vermiculite. Note, I would scrape off all the dry vermiculite upon birth. The side that is face down would sit on a saucer which I layed 1 inch of damp verm on. After one or two flushes, depending on abundance of cubies, I would then flip the cake and recase the bottom, which is now the top. I would go back and fourth keeping my cakes around for months as long as cubies were growing. Good luck.
