So I negleted my shiitake project a bit too long. Now I'm afraid to open this bag...

This was what my shiitake bags looked at Jan 2.

I got this strain from a spawn plug kit.

Shiitake browns like that over time. I'd open it outside and hose it off. I usually cold shock outdoors this time of year, then dunk in a bucket outside as well, then if it smells ok, bring back inside to fruit. It's probably ok. RR

I quote RR, during this summer i came back home and see a bag gave for present from Owl in that condition. I dunked it in cold water for 24 hours than cold shocked(outside or in the fridge for 7 days). Put it in the fruiting chamber and they'll start to pin after 3-4 days. Remeber to dunk and cold shock the block after every flush, but of course, after the first flush first COLD SHOCK for a week than DUNK. The weight of the block drastically lows after the cold shock! You will not recognoize it Be sure that aspergillus doesn't attack the block, and follow the RR suggestions in the past threads (wash the block every 2 days with high pressure water, the mycelium won't be damaged, to prevent contamination.)

That block is already fruiting. Those things on top are fully formed shiitake mushrooms, just a bit distorted. I am sure they are still good to eat.

I decided to do something at last. Opened bags looked really vile with black drops oozing from them but had a nice fresh shiitake smell.
I had to junk couple of the largest which were too old and soft but there is some deformed but delicious looking crop. Should this be called "Compleat sloth fruiting tek"? The cleaned blocks are in cold water dunk now and I have a growing space for them prepared.

Looks like no harm done by letting shiitake blocks to wait until they pin invitro. Do all shiitake strains behave like this or is it just this one? This is from a hobbyist plug spawn kit so it probably is an easy strain if there is a difference. I've grown these at room temperature, 20-24C exept for a overnight dunk in cold (ca. 5C) water after birthing the blocks. (This is my first Shiitake grow ever BTW.)

I have a quick question about pinning. How and when do you know the substrate is ready to begin fruiting? Should the colour of it be brown (as it says on one of the cultivation faqs) or should it be white? Does it matter?

You can usually get a pretty quick flush from shiitake if you'll give it a full week of reduced temperatures beginning a week after full colonization. After the cold shock, I dunk the blocks and place into fruiting conditions. They begin to pin right away. First flush usually comes four to six weeks after inoculation of the substrate blocks with colonized grains.
To help prevent trichoderma, I take the blocks out of the mini greenhouse every two or three days and rinse them well under the faucet in the kitchen sink. This washes the trich spores off before they have a chance to sneak into the wood. RR

i do the same as RR, but i dont dunk, i mist them 3 times a day moderatly once they pin, and still get nice yields!!!
I'm also doing a 50/50coir/verm casing mix, and wil post my results---which are seeming promising so far...

Collected about 750g of cleaned shiitake from my two blocks. The one in pictures produced about 2/3 of it. Total edible crop (with the in vitro shrooms) is over 1kg this far.

Tastes great, definitely worth the little work it took.

A 50l plastic box, a spoon tray at bottom, a cheap aquarium pump, a water filled plastic jar with a large aquarium stone and a tube to direct air flow downwards. Works for me and does usually not require misting or fanning.

Shiitake is very tolerant of high CO2 levels. Oysters or lion's mane would probably do poorly without more fresh air exchange.
