I really don't consider those instructions on how to use the old style AA pressure cookers though...

I did a write up on how to generally use one with the toggle pressure relief valve type...a few years back.

here it is....

here is how I do mine...

depending on the size jars you are going to use...
2" of water for Pint and Quart jars.
1 1/4" of water for 1/2 pint wide mouth jars.

Hopefully you have a tivet...the rack that came with the pressure cooker.
If not use some kind of towel in the bottom...and put the water level above the towel.

Load the jars in...

Put wax on the lid...then put the lid down squarely onto the bottom part of the pressure cooker.
Do a V pattern when tightening it down to keep it square...then tighten the others down.
Then tighten it all the way around to make sure they are all tight.

Turn the pressure relief valve upward...to the open position.

Then turn your stove onto medium heat...for 10 minutes.
Then turn it up to medium high...til you see some steam coming out the top of the pressure relief valve.
Then flip the lever down on the pressure relief valve...into the closed position.
Then watch the pressure gauge go up.
When the gauge gets to 13 psi...turn the heat down on the stove.
About one click below the middle of low and medium on my stove will keep it at 15 psi.
Every stove is different...so you will have to play with your stove to find the right spot on the dial.
The best part about having the pressure relief valve is...that you can let off on the pressure if its above 15 psi and dial it right in.
***Warning*** When letting off (pressure)steam from the pressure relief valve...use a large utensil so you don't burn your fingers!~***
Keep playing with the dial on the stove til the gauge stays on 15 psi.
If it falls below 15 psi...turn the heat back up for a couple minutes.

Depending on what kind of substrate and jars you are pressure cooking...will determine how long to run the pressure cooker.
When your time is done...pull the pressure cooker off the hot burner and put it on another burner that is cold...to cool down.
Let the pressure cooker cool down...and the pressure will let off on its own.

Thats pretty much it.

I'd suggest replacing the pressure relief valve...every year or two.
They don't cost much...and they can go bad.
They are pretty cheap online.

I replace my pressure gauge every 3 or 4 years.

If you have any questions...feel free to ask.

tc
