Well if all things go as planned, I will be a lawyer and making decent money in the future. I see myself making good money in the future and wonder why I should save NOW when it will be nothing compared to what I make once I get a real job.
Put away 8,000 to save for a house now, or wait till I'm making 80,000 a year and then get a house?

That's one way to look at it... Or, you could get a lot more house if you have 8,000 more to put on a down payment.
Personally I'm just out of college and am now saving about 60% of my income, but I'm not planning to buy property or a home for a few years. Get ~200K then jump in the market.

If you want to save save, but if you want to live a little you gotta spend a little. Go ahead and spend and keep a little just-in-case-shit-happens money, just in case.
Things to think about would be, hawaii, bahamas, south america, big motherfuckin stereo, a car?, a car upgrade, car audio system, if you plav musical instruments then you know..., lots of drugs, hoes galore, big pimpin at the club, limo rental, tux, with a superman costume underneath, bigger apartment, larger mattress, silk boxers!, instal a strippers bar in your livingroom/bedroom, patron tequila, a motorcycle, breast implants, some new shoes (high healed stilettos), a pony, a swing, a bicycle, rollerblades, soccer ball, large paintings or photographs to cover a wall, mirrors for your floor and ceiling, a large bonzai tree, spinning rims, spinning rims for your skateboard, etc. etc.
The possibilities are endless, so choose wisely.

Ohhh I think I might like a bike! The house I am renting in the fall will be about 5 minutes away from a long ass bike trail, could be fun! And I have always wanted to try playing a didgeridoo, maybe I should get one? Hmmm!!!!

It would definitely be a smart idea to invest a good chunk of it. You'll thank yourself later on, I can guarantee it.
As far as buying any material possessions go...unless there is something you really would like to have and know you would use it to its fullest (maybe a bike...that you know you'll ride all the time) then I think it would be a waste. You already stated that you are a simple person and I don't think possessions would bring you much satisfaction.
The one thing that has been mentioned here, albeit casually, is travel. Stop and think about the position you are in. You are a young person who has no physical ties to bind him (family, mortgage, etc.), you have time in your life right now that you could afford to take a vacation (that'll be different once law school starts), and you have a little extra money to spend. I see no reason not to treat yourself to a little travel. Once you start school, then a career, then a family...well, it could be years before you have the chance again. Pick a place that really interests you and go for it. It could be anything from something as obvious as a Hawaiian vacation to something really different like trekking through the Himalayas in Tibet. Go, have a good time, experience some other cultures/peoples, and don't forget to take a lot of pictures! You'll have memories that'll last forever.
I have met so many people my age (around 40) that have never been anywhere. They've spent their entire existence within a few hundred or a thousand miles of where they have always lived. That is sad to me. Everyone should get the chance to see a little of the world, and anyone who can do a bit of it at a young age should.

I'm going to law school the year after next. I'm taking a year off to travel and save up some money so i dont have to work while I'm in school. Where are you attending if you don't mind me asking?

Invest a couple thousand and then put money on a car, get a tv, vacation(yes), take a few of your close friends out and treat them, treat your family to dinner, yada yada yada.

i would wait till around summer, go to germany, and go to each psy-trance festival, since they have one practically each weekend.
other than that, i would use the money to go backpacking around the world and try to live as cheaply as possible.

buy a generator, speakers, synth, mixer, decks, jacks and start having partys out in the bush 
or TRAVEL, im saving to travel now, u dont need to travel with your buddys, they will tie u down on a budget backpacking adventure, meet new people, follow the flow, and have fun
