Currently 'bucketing' with PF Classic. Man what an easy way to grow. WBS to 50/50 coir/bagged cow manure, cased with 50/50 peat/verm with a touch of gypsum. Taken out of incubator last night.

I can't see myself using any other grow method. I'll post some pics when it's more advanced - should I append here or start a new thread? The mycelium looked mad prior to casing.

From a hardware store? We can source cheap buckets in Australia for 85c, I'm not sure if you can get such cheap buckets in your neck of the woods.
How many days is "the other day"? If your bucket's the same dimensions, couldn't you just slide the material out into the new bucket if it's a solid mass? If it's not, transferring shouldn't be a problem anyway as the mycelium will regrow after transfer.
I'm no expert, but I can't see the problem doing such. The alternatives are:
1. Seal your existing holes and cut new ones but that just seems like too much hard work! 2. Remove some of your bulk substrate to allow placement of your casing layer, 3. Not even use a casing, but I'd consider that an absolute last resort.
As I said, I'm not an expert but am a scientist. Everything I say is theroretical but could provide the answer you seek.

My bucket's coming along beatifully and will post some pics soon. Unfortunately I'll be going away for the weekend and will either harvest early or leave until Sunday night. Decisions, decisions.

Okay, so I thought I'd add a few photos. Here's a series taken almost 24hours apart for the last few days. Question is, I'm going away in less than 24 hours for almost 50 hours. Should I harvest the largest mushrooms or just wait until I return home?

Okay, so I decided to harvest prior to leaving as one of the veils had broken. Here's what I ended up with:
 and here they are drying on newspaper:

The caps are incredibly small for such long mushrooms and very different to the other PF Classic mushrooms I grew in summer. I wonder if it's the low ambient temperatures? They're still not cracker dry, but will post a final yield when they are.
Managed 16.5g dry. The next flush is much larger and almost ready to harvest. This time I will leave until they look bootiful

The second flush has been harvested, one was a little more advanced than the rest and he was picked last night.

I don't have a grow log for it. I used a spore print from a wild sub, inoculated a small jar of WBS, let it fully colonise and then added some boiled and cooled woodchips to the bucket with the WBS. It looks like it's starting to colonise now.

ZA: isn't the whole idea of using buckets to avoid any extraneous items? 
Buckets need only little attention to be very successful. They basically need no humidification compared to a traditional fruiting chamber.
If you're going to setup such an elaborate system, a humidified tent would probably be a better and more productive setup.
