So there is no published mycological or biological reason as to why this is the norm is what you're all saying?

There is a techical reason, as I stated above:
If you birth the cake by sliding the cake out of the jar, this is the only way it will come out.

Holy makeral you guys, I've seen shrooms pop out all over a cake.

Try this:

Get some jar rings for the smaller 1/4 pint jars. Now stand your cake on edge on this ring. It will keep it off the bottom and allow air flow throughout.

When you see the shrooms starting, just adjust your cake to a proper position so they have room to grow. Often the shrooms will start underneath where its darkest.
