Is it a good idea to let your colonized substrate incubate for long periods of time? I always get better flushes from the casings I forget to move to the fruiting chamber (letting the jars incubate for an extra couple of weeks). I think that it gives the mycelium time to consume more nutrients.

if my friend lets a casing incubate for more than 2-3 days, he gets wicked overlay. i can't imagine what kind of problems i would run into if i left them for "an extra couple of weeks."

of course, i've seen some really nice flushes from casings with overlay posted by talented folks here at the shroomery lately...

You're just loosing time. Let the jars incubate and colonize 100%, case them and then let them rest 5 days to one week so the mycelium gains strength, just cover the casing with tinfoil and some holes poked on it, let them rest at the same temp you incbate them. Then uncover the casings and place them inside the terrarium, if pinning haven't ocurred scratch the top layer a bit with a clean fork and water the casings, pinning will ocur in no time.
If you let the mycelium incubate too much time it will certainly eat up some nutrients, but you want those nutrients to be spared for flushing, less nutrients, less flushes.
