I just bought a package of Enoki at my local store.
Any one have any good recipes for these mushrooms?

there's a GREAT Ming Tsay recipe for enoki mushrooms.

It basically consists of sauteeing the chopped mushrooms in garlic and soy sauce, then adding ground beef, chopped shallots, and rice.


DELICIOUS fried rice. I top it off with some shredded dried seaweed and sesame seeds.

I just make this Friday and it's very good

Take a 1/2 pound of cod and steam it. Let it cool somewhat.

Tear off a 1/4 of a package of enoki and cut off the base, and tease the individual mushroom stalks apart then saute in olive oil in a skillet until slightly brown.

Put the fried slighty brown enoki on the cool fish on a dish and add a half a cup of Kim chi to the plate. Sprinkle a little olive oil over the whole mess and eat. Very good.

did you buy cultivated enoki or wild? Are they white? From my expierence enoki doesn't saute well or keep well in butter, it tends to turn to mush, no pun intended. Personally i like them fresh and raw. In japan they usually are served in sushi and salad dishes.

The ones with the fish dish were cultivated with white long thing stems and small caps. They were sauteed in olive oil till they were almost crispy, they are sort of chewy this way and somewhat sweetish. If you don't cook them long enough they will be mushy.

Raw enoki with sushi sounds like something worth trying.
Do the Japanese serve enoki raw with sushi?

yeah, i like wild enoki personally, frying them in hot oil sounds interesting ill have to try that. maybe batter up some of the bigger caps.

If you batter them they will probably get mushy. I like the wild ones too, haven't found any this year.
