Boneless Pork Loin Roast

I found this really simple recipe online. Only thing I regret is not stabbing slivers of garlic into the meat, a thing I always do with roasts, but it was a huge 5 star rated recipe. So I had to do the original and taste.
Ingredients: 1 1/2 tablespoons fresh rosemary 2 teaspoons garlic salt 1/2 teaspoon dried thyme 1/4 teaspoon freshly ground black pepper 3 pounds boneless pork loin roast
First things first preheat the oven to 350 F 175C
Found this nine and a half pound pork loin at the market.
Split it in three..froze the other two.
Your rosemary
Now I'm not a huge fan of salt so I cut back a little on it.
Your thyme
Stir your spices up and rub it into the roast
Throw in your baking pan.
Cover and bake for 1 hour or until internal temp reaches 160 degrees F (70 degrees C)!!!!!Very important you don't want to dry the roast out. Nothing worse than dry pork roast, pork chops, dry anything.
It was juicy and great but I recommend stabbing garlic slices in the meat so the flavor is throughout and not just on the outside.

hmm i sort of dislike those "ungrilled" pork meals, but to each his own, looks tasty

if you have leftover pork roast you can make a nice chili verde
2 lbs. boneless pork 1 can green chilies 1 Red Bell pepper 6 Tomatillos, coarsly chopped Salt & Pepper 1 1/2 - 2 cups Chicken broth 1 12 oz. bottle lager or beer - drink half - use the other half 1/2 cinnamon stick 2 tsp ground cumin 1 Tbl oregano 1 medium onion diced small Fresh garlic to taste (chopped not crushed) Juice from 1/2 lime Grated zest (approx. 2 tbl) from Orange or Tangerine Plenty of freshly chopped Cilantro 2 jalapeno peppers Tabasco Chipotle Chili Sauce

no but seriously, I always respect someone who uses a mortar and pestle in cooking.
