Slice it uplike a cucumber, about 2-3" pieces , put slices in pan, crumble the rest to fill in the gaps.

Try throwing a half inch of vermiculite on the bottom of the pan and spray that with some water to give your casing some more moisture to work with.

Dream is also on top of things with his cucumber slicing recommendation.

The cakes are white all the way through. They feel very rubbery and light like styrofoam. They are very difficult to break up sometimes. I like to put my cakes into a plastic bag and break them up into pieces about quarter size and half and inch thick. This size varies depending on how many cakes I place into a casing. Obviously I want a thicker casing if more cakes are being used. I don't like the "cucumber" method. The casings tend to pin from the small cracks and deep ravines. Cucumber makes a flat casing. After breaking up in the bag you can dump the contents into the casaing. I like not having direct contact with my cakes. Good luck.

i'm not a big fan of the cucumber slice method, myself (not to suggest that it's inferior - it just hasn't worked as well for me). i put my cakes in a bowl and chop 'em up into tiny pieces with a sturdy butter knife. in my limited experience, the mycelium recovers more quickly and makes a nice, solid network.

i know some people like to even use a blender to tear their cakes into small pieces, but i don't really feel like trying that (i hate doing dishes, and it's a bitch to clean my old-ass 70's blender).

regarding the "inside of the cake" question - you better hope it's all colonized! (just kidding) seriously, though, it's recommended that you wait a week or so after the outside is covered with mycelium so you know the inside is fully colonized. whatever isn't colonized will be susceptible to contamination...

This is what I do..

I crumble 1 cake at a time in a sanwich baggie up into what I would consider pieces the size of a marble or smaller, I then case it on the bottom of a container about an inch thich and then add about a 1/4 inch of coir.... No vermiculite on bottom.

Pretty simple, I incubate for 24 hrs then uncover and stick in the fruiting chamber .. so far none of casing have "failed"
