About preventing mold in brewing.

I want to experiment with making fruit meads. i have tried before and gotten nasty molds....how the hell do i stop this? do i need chemicals? the other thing i am facing is the temps here do not go below 20 degrees C...is that ok?

i am really wanting to try making some mango, papaya, kiwi and starfruit brews...not that i really know how but i would like to play.

Did you sanitize everything that went into the mead(ie tools, fermenter ) and use a airlock ?

Well I am no mead expert, but I believe you can use Campden tablets to prepare the fruit juices prior to pitching the yeast. Supposedly it is not even necessary to boil the juice when using these tablets... so I assume that if you did boil and also used the tablets, there would be a very slim chance for failure so long as you practice good sanitation.

How long are you boiling your mead? How are you sanitizing your fermenter?

well i was far from sterile as with fungi but i did clean it all. i boiled for abotu an hour, too short? i cleaned the fermenter (a big glass jar with rubber lid thingy for gas exchange) with iso alcohol 99% and let air dry...this is likely where the mold came from eh? can i see some pics of some simple setups you guys use?
