Portabello mushroom appreciation + recipies.

So, i've been recently turned onto the wonder of Portabello Mushrooms!
As people who have been trying to cut down on the meat, the portabello is a healthy, tasty and economical alternative to tofu (or am i wrong?)..
Either way - we've been enjoying portabello's regularily in Garden Salads, Omellettes, and fried in garlic butter.
Anyone have any other tried and tested recipes? Perhaps portabello mushroom burgers?

don't eat too much portobello, they have a high copper content...or at least don't eat a lot raw, cooking helps some.
I fry mine slowly at level med-lo heat for a few minutes to absorb the butter/garlic (I use dried garlic flakes for mushrooms) then cook them on medium till both sides just start to brown up
They're also good in baked chicken dishes, especially in gravies.
Here's a hint: if frying, cover the pan with a top so as to retain more of the garlic flavor

Are you shitting me, burgers? Just fry em up whole like youve been doing then put them in a bun/pitta with some salad, keptchup and maya and there you go. Fucking brilliant.

LOVE bella-burgers myself.
another good one i like, put your caps gills down in a bakerdish, cover with thyme, oregano, whatever your fav spices are, put a chicken breast on top of each cap, then dump 1/2cup white wine, 1/2 cup veggie stock, let roast.

braised portabellos are the way to go.grill after that.put on micro greens w lemon thyme vinaigrette. after grilling you could add goat cheese. nice app or main dish. sesame,ginger,miso or balsamic glaze are nice to.need recipe, just ask. you got me started now. just made jasmine, tahini,sesame fried balls, with marinara
