They'll fruit just fine at 80F. You don't cold shock cubes unless you're trying to delay harvest. They're a tropical species that fruits in warm weather. In fact, cubes will fruit at temperatures into the 90's, which would easily cause a colonizing jar to develop wet spot and other contaminants. Fruiting temperature can be higher than incubation temperature, although cooler fruiting temps provide a higher quality product.
If you're using a small tub, you can freeze blocks of ice to put inside. RR

Why did you delete your question? This board is here so others can learn by reading the posts. If you delete the question, the next guy just has to ask it all over again, thus cluttering the forum.
The question was if a room is at 80F, which is great for colonization, how to reduce it for fruiting. RR
