The quality seems to vary a lot with the culture. I bought a bottle of Carpe Diem kombucha and it tasted great. The perfect soft drink - a bit sweet, a bit sour, a bit fizzy - so I tried making my own. What resulted from the culture I found though was more like vinegar than what I had tasted before. As I understand the culture is made up of various strains of yeast, Acetobacter and Lactobacter, which also develop differently depending on temperature. So if your starting culture has too much Acetobacter, for example, you'll have a very sour kombucha.
Looking more attentively on the Carpe Diem page, they say their kombucha is made only with lactic acid bacteria. So that's why it had only a slightly sharp, tangy taste as opposed to a vinegary one like mine. I'm going to try to make a lactic acid-only kombucha when I get the time, but as far as I know Lactobacter can only metabolize monosaccharides, meaning I'll have to use glucose or fructose. Also I wonder what would be a good source of Lactobacter. Yoghurt? Sauerkraut?

My wife has cultivated kombucha. We enjoyed it for a few months and then stopped. There are a few brands sold in stores where I live and I generally like them all.
As I understand it one of the major concerns when cultivating your own kombucha is not to use metal during the process.

We've had some experience successfully taking bits of floating culture from a Trilogy bottle from the store and growing it into a larger one to keep making our own.

Does anyone add ginger slices to the bottle before conditioning?
Would it be wise to do so?

Yes. I've made ginger kombucha before. If you brew the tea like normal and then crush the ginger into the sugar that works well. you can also do it with mint.

I am one of the people who bought a culture from your wife. Infact, I just started a new batch from that culture a couple hours ago before reading your post (this is my first time here in possibly a year). I've never had problems from your wife's culture and, like connie, it always comes out fizzie, tastie and most excellent
