Check other stores, or even look better in the one(s) you checked.
I was out looking for vermiculite when starting up growing again just recently, and went to this huge gardening centre near where i live, asking a couple of guys that worked there if they had any (verm). Neither of them had any clue what the hell i was talking about, so they led me to the manager, who did not have any idea about what i was talking about either. "Verm-whatnow?" I gave up and was on my way out when i walked past a huge rack of 3L vermiculite bags..

i've used millet, and quinoa
both are cool as spawn because they're small and when broken up means you have lots of contact points/surface area.
quinoa can even be cased and fruited straight, though not the best route (casing straight grains usually doesn't yield so well because of moisture issues).. but quinoa does hold more moisture than most grains so it turns out better than say straight WBS. the moisture thing would lead me to the next point on it, and that's be careful hydrating it. when i used it, i steeped it in hot water and within a mere 15-20 minutes or so it was ready and starting to burst open (which should be avoided)... a room temp soak would probably be wiser but even then the soak duration should probably be much less than the standard 24 hours for other grains. it does perform great when ground into a powder and used pf-tek style, but that's niether here nor there i guess. so... it has some pros and cons... and it was super expensive when i got it so i haven't bothered to get more.
but again the millet is cool to use... most WBS mixes have a high percentage of millet anyway and if you get WBS down you'll find it to probably be the most cost-effective spawn material out there.

Don't use that hulled millet you listed or you'll make millet mud.
