 Unlimited Compost- How do I use it?

I stopped by a prized horse farm - SHIT!!! They have two compost piles the size of my house!!! I filled up 8 trash bags(150-200lbs) with differant layers of the compost- Compost Piles are made of wheat straw, horse dung, donkey
dung, & chicken/rooster shit. This farm breads show horses so the majority of the compost is horse manure. Wood Chips & wheat straw are thrown into the piles which are churned with a tractor. WWoWWW- There are no anti-fungal fed to any of these animals!!!
The top of the piles is dry- about 1/2 foot into piles it is moist- about 1 foot into the pile the shit is hot/humid- 1-1/2ft into the pile The stuff is HOT-whitish Black & rich texture. When I say HOT I mean the compost was STEAMING HOT. THE COMPOST CAN BURN YOU!!!!
1. What is the best compost to use from the piles?
2. 10 Pes Hawaiian Qrt. jars are 70-80% colonized. What should I do?
(The Jars are mainly millet w/t some Quiono/Armarinth grain.)

Use the dry stuff. When your cakes are colonised break them up into very small pieces and mix with pasteurised horse dung.

I'm worried about using compost that is not ready & will destroy my Mycellium. I do have a trash bag of compost from piles top which is dry but i read to use the steaming hot stuff that is white that I also have. The texture of the dry stuff to the white stuff is very differant. The dry compost is straw/soil like- not so black & rich - as the steaming compost is black/rich & looks the same as pleezrs compost.
What is better for more fruits?
Also I will be using Psilo187's tek with compost instead of worm castings. Good Idea?

This is as I understand it. Mushrooms such as cubes are a primary decomposer. They like fresh material like woodchips, straw, rice, seeds, and grains. The compost toward the middle of the pile has been broken down by bacteria and microbes. In this process the organisms have removed a lot of the potential nutrients that the cubes could use. These organism also produce byproducts, such as ammonia, which are bad for the mycelium. I have used black manure compost and have had bad luck. When I have used more fresh compost I have had good luck. One can grow cubes from straw. Your dried horse dung is chewed and partially digested straw, perfect for cubes.
