Qustion about fruiting in a myco-bag

The bag appears fully colonized and I was just windering if I should go into fruiting or wait a week while it's colonized then go into fruiting. Since it's in the bag I think I can fruit now, while a cakes mycelium has to grow stronger for a week so it won't get contaminated when you birth it.

Am I right?

Wouldn't it be best to wait until you see primordia forming all over the substrate before you start to friut it?
